- Choose lychees that are pink-red in color, round, and have smooth spines.

Preparation and soaking of shrimp
Clean the shrimp, soak in diluted salt water for 2 – 3 minutes to remove the slime, then take them out and let them drain. After that, peel the shrimp, use a knife to cut along the back to remove the shrimp vein and place the shrimp in a bowl.
Quick way to remove shrimp vein:- The quickest way to remove the shrimp vein is to make a cut along the back of the shrimp and then use the sharp end of a toothpick to scoop out the vein.
- Alternatively, you can bend the shrimp head and gently squeeze from the tail to expose the vein, then hold the vein and pull gently to remove it.
To eliminate the shrimp odor and infuse the shrimp with the flavor of lychee, after cleaning the shrimp, soak them in 300ml of lychee soda for 1 hour.

Make lychee sauce
Pe the lychee, remove the seeds. Keep 2/3 of the lychee whole, and blend the remaining 1/3 with 100g of mayonnaise in a meat grinder until smooth.
