How to choose good beef

How to prepare Coffee Braised Beef

Prepare vegetables
Use a peeler to clean the skin of the carrots. Then cut into pieces about half the length of your finger.
Peel the onion. First, cut the onion in half, then divide it into four parts.
Wash the celery, let it dry, and then cut it into small pieces suitable for eating.
For bay leaves, thyme leaves, and celery leaves, wash all the leaves together. Then use string to tie these leaves tightly together.

Preparation and marinating beef
To eliminate the unpleasant smell of beef ribs, wash the ribs with diluted salt water, then rinse with clean water, drain, and cut into bite-sized pieces.
Then marinate the beef ribs with a little salt and pepper, rub the seasoning evenly over the ribs and let it sit for 15 minutes for the ribs to absorb the seasoning.
How to eliminate the unpleasant smell of beef ribs- Use lemon vinegar: Rub lemon on the ribs or soak the beef ribs in diluted vinegar for about 5 minutes, then rinse with clean water.
- Use shallots: Roast shallots, then mash them and marinate with the beef ribs to eliminate the smell and enhance the delicious flavor.
- Use ginger: Roast ginger, mash it, and rub it on the ribs. Then rinse the meat clean with water.
- Use white alcohol: Soak the beef ribs in diluted white alcohol for about 15 minutes, then rinse clean with water to eliminate the smell.

Searing the meat
Put a pot on the stove, add about 2 tablespoons of cooking oil to the pan. Heat the pot over medium heat.
Once the pot starts to heat up, add the beef ribs one piece at a time, searing for about 5 – 7 minutes until the meat is firm and slightly charred, then flip to the other side, continuing to sear for another 5 – 7 minutes until the ribs are golden brown on all sides, then turn off the heat. Remove the meat to a plate.
Tip: Searing the meat before braising will help it to firm up and absorb the seasoning better. -
Beef Stew
Add a moderate amount of oil to the pot used for searing the beef ribs. Then, gradually add carrots, onions, celery, and 1 tablespoon of minced garlic to the pot, sautéing for about 10 minutes to release the aroma.
Next, add 50g of tomato sauce, mixing well. Continue to pour in 250ml of red wine, heating over medium heat until the wine boils and reduces to about half the original amount, then reduce the heat to low.
Finally, add 400ml of Cold Brew coffee and 250ml of beef broth to the pot, heating over medium heat. When the liquid boils, add the beef ribs and the bundle of herbs tied with string into the pot. Let it simmer on low heat for about 3 hours, and then the dish is ready to enjoy.

Final Product
The beef rib pot has a fragrant hint of coffee. The meat, after being stewed, is tender and juicy. Especially, the broth is blended with the sweetness from vegetables, a slight bitterness of coffee, and a bit of strong sourness from the wine, making the dish more unique and appealing.
