When choosing ribs, you should select a type that has both bone and meat so that when cooked, the meat does not fall apart but still has good flavor. These rib pieces usually have flat and small bones.
Fresh and delicious beef ribs should have a bright red color and a distinctive smell. You should avoid pieces with a foul smell or a preserved odor.

Prepare the beef ribs
To clean the beef ribs thoroughly and remove any odor, dissolve a little salt in warm water and soak the ribs for about 3 – 5 minutes, then rinse well, drain, and place them in a bowl.

Additionally, to completely eliminate the odor of the ribs, before cooking, briefly dip the meat in boiling water for about 3 – 4 minutes, then take it out and rinse with cold water.

Marinate the beef ribs
Finely chop the shallots, garlic, and ginger. Add half of the chopped shallots, garlic, and ginger to the bowl of beef ribs, then add 1 tablespoon of soy sauce, 1 tablespoon of dark soy sauce, 1 teaspoon of white wine, and half a teaspoon of cooking oil. Mix well to let the ribs absorb the seasoning, and marinate for 20 – 30 minutes.

Fry the beef ribs
After marinating, add flour to the mixture and mix well. Pour enough oil to cover about one finger joint in a pan, and when the oil is hot, add the marinated beef ribs and fry until golden brown, then remove and place on paper towels to drain excess oil.

Black pepper sauce beef ribs
Add the remaining shallots and ginger to sauté until golden, then add 1 tablespoon of black bean sauce along with half a small cup of water, seasoning with 1 tablespoon of sugar and pepper, and adjust the seasoning to taste.
Add the fried beef ribs to soak in the seasoning for about 5 minutes, then add the cornstarch water and mix well, then turn off the heat.
