Beef belly 100 gr Enoki mushrooms 50 gr Bell pepper 1 piece Tomato 2 pieces Minced garlic and onion 1 tablespoon Chili sauce 1 tablespoon Fish sauce 1 tablespoon Cooking oil 2 tablespoons Common seasonings a little (salt/ seasoning powder/ ground pepper/ sugar/ monosodium glutamate)

How to choose fresh ingredients

How to choose fresh beef

  • Choose beef that is bright red, with light yellow fat, has a characteristic aroma, and the meat is small, tender, with fine fibers.
  • If you see the meat has small, white nodules that are easy to detach, it may contain parasites, and you should not buy it.
  • To check the quality of the meat, you can press on the cut of the meat with your hand; if no slime comes out, and the meat is soft, dry, and has good elasticity, then it’s good quality meat.
  • Avoid buying meat that is pale green or dark red, has dark yellow fat, and has a strange smell, as this may indicate old or low-quality meat.

How to choose fresh and delicious enoki mushrooms

  • Fresh and delicious enoki mushrooms usually have an ivory white color, the stems do not have black spots, and are slightly brown. Additionally, the caps of the mushrooms are firm and tightly attached to the stems.
  • You should avoid buying mushrooms that are oozing slimy liquid, bruised, with stems that are separated and breaking apart as these are types of mushrooms that have spoiled and cannot be used.
  • You should limit buying enoki mushrooms that have a moldy surface, and when smelling, if you detect a strange foul odor, it may be because the enoki mushrooms have been excessively sprayed with pesticides.

How to buy fresh and delicious tomatoes

  • Fresh and delicious tomatoes have a bright red outer skin, plump, evenly colored, with intact skin, and no scratches.
  • Natural ripe tomatoes usually have a light fragrance, while artificially ripened tomatoes often have no smell.
  • You should choose tomatoes that still have the stem attached, with the stem still fresh and not wilted, as these are freshly harvested, delicious tomatoes.
  • Do not buy soft and mushy tomatoes, with wrinkled skins, as these are tomatoes that have been around for a long time and are no longer fresh. Additionally, do not buy green tomatoes as they are not good for the body.

How to prepare Beef Rolls with Enoki Mushrooms in Tomato Sauce

  • Prepare the ingredients

The beef you buy should be washed thoroughly with water, then cut into thin slices about the length of a hand. Next, place the beef into a bowl and marinate with 1/3 teaspoon of salt, 1/3 teaspoon of ground pepper, and 1/3 tablespoon of seasoning, then use chopsticks to mix well so that the meat absorbs the seasoning evenly.

Effective ways to prepare and eliminate the smell of beef
    • Method 1: You can use roasted ginger, crush it finely, then rub it on the surface of the beef and rinse with water.
    • Method 2: Soaking the beef with white wine for about 15 minutes will effectively eliminate the smell of beef.
    • Method 3: After buying, wash the meat briefly with cold water, then blanch it in hot water (not boiling) for about 3 minutes, then remove it.
