Prepare and marinate the oxtail
Scrape off any remaining hair from the oxtail and pig trotters you bought. To eliminate the foul smell, use salt and white wine to rub all over the surface and let it sit for 5 minutes.
Then rinse thoroughly with clean water, chop the oxtail and pig trotters into small pieces, about the thickness of a finger joint.
Peel and wash the ginger. Peel the garlic. Finely chop both ginger and garlic. Set aside 1 teaspoon of annatto powder, and keep the rest which is about more than 1 tablespoon.
Put all the oxtail and pig trotters into a plastic bag, add 1.5 tablespoons of fish sauce, 1/2 tablespoon of salt, 2 teaspoons of seasoning powder, 1 teaspoon of ground pepper, 2 tablespoons of cooking oil, more than 1 tablespoon of the annatto powder you set aside, all the chopped ginger and 2/3 of the chopped garlic.
