- Avoid buying black beans that have a thin white powdery layer on the outside and show no signs of mold or insect infestation.
- They should feel firm and solid when squeezed. Additionally, prioritize beans that are uniformly sized, not too large or too small, and have no pale colors.

Prepare the oxtail
After purchasing the oxtail, clean it thoroughly with a knife to remove all hair.
Next, wash the oxtail and cut it into bite-sized pieces.
Prepare a pot of boiling water, add 1/4 piece of ginger, and blanch the oxtail for about 5 – 7 minutes, then remove and let it drain.
How to clean oxtail to avoid odor
- Soak the oxtail in water for about 10 – 15 minutes.
- Wash the oxtail, scrape off any remaining hair, then rub salt onto the oxtail. Continue to rub ginger onto the oxtail to reduce the smell, and rinse 2 – 3 times with clean water.
- Cut off any fatty parts at the base of the oxtail.
