How to prepare Steamed Rice Cakes with Shrimp and Pork filling

Prepare ingredients
To eliminate the fishy smell of the shrimp, dissolve 1 teaspoon of salt in 300ml of water, soak the shrimp for about 5 – 10 minutes, then rinse thoroughly 2 – 3 times with water. After that, remove the shrimp and let it drain.
After the shrimp has been washed clean, peel off the head and shell of the shrimp, then gently cut along the back of the shrimp with a knife and slowly pull out the black thread of the shrimp to remove it, then chop finely.
How to clean shrimp without a fishy smell:
- Method 1: Sprinkle cornstarch on the shrimp. Cornstarch will help eliminate the fishy smell and absorb any dirt remaining on the shrimp, then rinse the shrimp clean.
- Method 2: Soak the shrimp in diluted saltwater or a little white wine, using your hands to gently squeeze to clean the shrimp. After that, rinse thoroughly with water before using the shrimp for cooking.
Place a pot on the stove over medium heat, add 100ml of water to boil, once the water is boiling, add the shells and heads of the shrimp and boil for about 5 minutes, then strain through a sieve to collect the shrimp broth.
Trim the green onions by removing the yellowed leaves and roots, wash them clean, then chop them finely and separate the green onion tops from the white parts. Remove the stems from the chili, wash clean, and chop finely.
Add 1 tablespoon of tapioca starch to a bowl, add 2 tablespoons of water and stir well.
Rinse the rice clean and soak it in water for 8 hours or overnight.

Grinding rice
After soaking the rice, drain the soaking water, rinse with clean water, then put it into the blender with 200ml of water, blend until smooth, then strain through a sieve.

Mixing the batter
In the bowl of ground rice, add 2 tablespoons of tapioca flour and 2 tablespoons of cooking oil, stir well and let the batter rest for 30 minutes.

Stir-fry filling
Place a pan on the stove over medium heat, add 2 tablespoons of cooking oil to the pan, and wait for the oil to heat up before adding the chopped green onion to sauté until fragrant.
When the green onion is fragrant, add the minced meat and stir-fry for 1 minute, then add the minced shrimp and stir-fry together for another 2 minutes.
Next, add the shrimp broth, 1 tablespoon of annatto oil, 4 tablespoons of water, the tapioca starch water, green onion, and 1 teaspoon of pepper to the pan, stir well until it thickens slightly, then turn off the heat.

Steaming the batter
You place the bowls for making steamed rice cakes into the steamer, then cover the pot and cook for about 15 minutes to heat the bowls. After that, pour in about 1/3 of the batter (you can add more batter if you like thicker cakes), then cover the steamer and steam on medium heat for about 20 minutes until the cakes are cooked.
After that, you take the cakes out and repeat the process for the remaining batter.
Tip: To know if the batter is cooked, you can poke it with a toothpick; if the toothpick comes out dry, then the cakes are ready to be taken out!

Making the dipping sauce and finishing
Mix the sweet fish sauce to accompany the rice cakes using the following recipe: in a bowl, add 1 tablespoon of fish sauce, 1 tablespoon of sugar, 4 tablespoons of water, and 1 minced chili, then stir the mixture until dissolved, adjusting the seasoning to taste.
