Dried bird’s nest 2 gr (or 10gr fresh bird’s nest) Dried ginseng 3 gr (2 slices) Dried lotus seeds 10 gr Red dates 1 fruit Goji berries 2 gr Rock sugar 2 teaspoons

How to choose fresh and delicious ingredients

How to choose good quality bird’s nest

  • Good quality bird’s nest usually has a cloudy white color, and has a crispy texture; when held, it feels fragile and not too soft.
  • When gently squeezed, the bird’s nest should feel crispy and easily breakable. On the contrary, if it feels chewy and soft, you should definitely not buy it.
  • Additionally, you should limit purchasing bird’s nest if you observe that the strands look smooth and tightly woven together rather than having a curved shape, as that indicates fake bird’s nest.

How to choose good quality ginseng

  • Good quality ginseng usually has a plump head, looks sturdy, and the roots have a brownish-yellow color.
  • When pressed, the ginseng should feel firm, not too soft, and when held, it should clearly feel solid.
  • You should avoid buying ginseng if it lacks the characteristic fragrant smell, and if the body is white, as that could be fake ginseng.

How to choose delicious red apples

  • Delicious red apples are those that have a dark red color, a smooth skin that may be slightly wrinkled, but do not show any unusual tiny spots on the surface.
  • When smelled, you should detect the characteristic scent of red apples; conversely, if there is a musty smell, you should absolutely not buy it as that indicates spoiled red apples.

How to choose delicious lotus seeds

  • Currently, there are 2 main types of lotus seeds: fresh and dried. Depending on your preference, you can use either type to cook with bird’s nest!
  • For fresh lotus seeds, you should choose those that have just been harvested, with an off-white or deep yellow color, and the seeds should appear plump and round, not too misshapen.
  • For the dried type, you should choose seeds that are opaque white, as they have been dried and will be smaller in size compared to the fresh ones.
  • For both types, you should limit buying lotus seeds if you notice too many tiny spots on the surface or if they smell rotten, as this may indicate that the seeds are spoiled and have been soaked in chemicals for longer preservation.

What is goji berry? Where to buy goji berries

  • Goji berry is also known by other names such as monkey’s paw, goji root, or wolfberry. After being dried, goji berries are usually transformed into various dishes, sweet soup,… or even used in traditional medicine.
  • Delicious, quality goji berries are those that have a bright red color, resembling rice grains, and do not show any unusual dark spots on the surface.
  • Pressing lightly with your hand should feel the goji berries are soft, not too hard. Especially, you should limit buying goji berries if they smell musty.

Ingredients for bird's nest soup with ginseng

How to prepare Bird’s Nest with Ginseng

  • Soak the nest

    First, for 2 grams of dried nest, put it in a bowl with 200ml of water, and soak for about 30 – 40 minutes.

    Once the nest is soft, use your hands to tear it into small edible strands, then use a sieve to drain the water.

    Tip: If you use fresh nest, there is no need to soak it!

  • Steam the nest

    After soaking the nest, place a pot on the stove with 200ml of water, and at the same time, place a bowl inside with 10 grams of dried lotus seeds, 2 slices of ginseng, and 1 thinly sliced red apple, cover the lid and steam over medium heat for about 15 minutes.

    Once the ingredients are soft, continue to add the entire amount of soaked dried nest and 2 teaspoons of rock sugar, and steam for another 10 – 15 minutes.

    Finally, when the bowl of nest boils again and the sugar has dissolved, turn off the heat and take the bowl out!

    Tip: To avoid losing nutrients and becoming mushy and unappetizing, do not steam for more than 15 minutes.
