- You should choose eggs with a slightly rough shell, where you can feel many tiny dots on the surface when touched.
- Opt for eggs with a dark brown, uniform surface, without cracks or unusual black spots.

How to prepare Bitter Melon with Egg in Oyster Sauce

Prepare the ingredients
Wash the bitter melon thoroughly, cut it in half and use a spoon to scrape out the seeds inside.
How to reduce the bitterness of bitter melon
- To reduce bitterness, soak the bitter melon in ice water or place it in a refrigerator at a low temperature for about 10 – 15 minutes.
- Alternatively, you can also reduce the bitterness by marinating with salt for about 15 minutes, then rinse thoroughly and continue with the dish preparation.
- Another method is to blanch the bitter melon in boiling water at a temperature of about 80 degrees Celsius, then remove and soak in cold water for about 1 minute.

Break 4 chicken eggs in turn, separating the yolks and whites. Next, whisk the yolks well.
Chop off the wilted leaves and roots of the green onions, wash them clean, and then chop them finely.

Steam the bitter melon with eggs
Place a steamer on the stove, carefully arrange the bitter melon in the steamer, then spoon the egg whites into the centers of 4 pieces of bitter melon, cover and steam for 15 minutes.
After 15 minutes, continue to pour the beaten egg yolks over the 4 pieces and steam for another 10 minutes.

Make oyster sauce
While waiting for the bitter melon to steam, heat a pan on the stove and add 2 tablespoons of cooking oil. Wait for the oil to heat up, then add 2 teaspoons of minced garlic and shallots, stir until the garlic and shallots are golden and fragrant, then add 100ml of water, 2 tablespoons of sugar, 2 tablespoons of oyster sauce, 2 tablespoons of soy sauce, 1 teaspoon of pepper, and 1/2 teaspoon of monosodium glutamate.
Stir the sauce mixture well and cook for 5 minutes. After 5 minutes, the sauce thickens slightly, adjust the seasoning to taste, and then add the chopped green onions and mix well. Turn off the heat.
After 10 minutes, the steamed bitter melon with egg is done, carefully transfer it to a plate to cool, then slice it diagonally for easier eating.
Finally, place it on a plate, drizzle the oyster sauce over the surface, and enjoy.
