  • You should choose black beans with a green heart, thin skin, beautiful shiny black color, and evenly round seeds. Additionally, good black beans will have a characteristic aroma.
  • You can test by squeezing the seed hard; if the seed remains the same, it is a good seed. If it makes a sound when squeezed, the seed is definitely hollow, and you should not choose this type of seed.
  • Avoid buying seeds that are shriveled, have a musty smell, or pale color as these are signs that the beans have been stored for too long and are about to mold.

How to choose good sticky rice

  • Choose sticky rice grains that are large, uniform in size, opaque white, with a shiny exterior and no broken grains.
  • Do not choose sticky rice grains that are dusty, have fur, or are yellow in color.
  • Additionally, good sticky rice will have a natural, characteristic aroma similar to rice. In contrast, sticky rice that has been stored for a long time will usually lose its scent and will not retain its deliciousness when cooked.
  • You can taste the sticky rice by mouth; if it has a light sweetness and no strange smell, it is good sticky rice.
  • You can refer to good sticky rice types such as: yellow flower sticky rice, Tu Le sticky rice, Dien Bien glutinous rice, goose sticky rice, and velvet sticky rice.

  • Soak black beans and sticky rice

    Soak the black beans and sticky rice in water for 4 – 6 hours.

    Then, rinse the sticky rice and black beans and let them drain.

    First, place the black beans in the rice cooker.

    Mix the sticky rice with 1/2 teaspoon of salt, then spread it evenly over the black beans.

    Next, pour 580ml of water into the pot and set the timer to cook for 12 minutes.

    Tip: If you don’t have an electronic rice cooker, press the Cook button twice for a traditional rice cooker!

  • Making sweetened black bean sticky rice

    Place a pan on the stove, add 15ml of water, 300gr of brown sugar, and 55gr of minced ginger jam.

    Cook the mixture over low heat until the sugar completely dissolves. Then, add the black bean sticky rice and mix well.

    When the mixture is well combined and the pan is almost dry, add 1 tablespoon of coconut oil and continue to mix for 15 – 20 minutes until the sticky rice and pan are completely dry.

  • Pressing the sticky rice

    Brush a thin layer of cooking oil into the mold, sprinkle a layer of roasted sesame seeds evenly, then add the sticky rice and press it down tightly to flatten.

    Finally, cover the top with another layer of roasted sesame seeds, let the sticky rice cool completely before enjoying.
