Black beans 200 gr Rock sugar 180 gr Soy sauce 1 tablespoon Baking soda 1 teaspoon (baking powder)

How to choose fresh and delicious black beans

  • Choose beans with thin skins, beautiful shiny black color, round and uniform in size. Good black beans will have a light, characteristic aroma.
  • Hold the beans in your hand and feel them firm inside; if you squeeze them hard and they still feel the same, they are good. If they crack or make a sound when squeezed, they are definitely hollow inside and should not be bought.
  • Avoid buying wrinkled, rotten, or faded beans, as these are signs of being stored for too long and nearing spoilage. When purchasing, pay attention to the expiration date because if they are past the date, they may contain dangerous toxins.

How to Make Black Bean Jam in Chinese Style

  • Wash the black beans

    Wash and clean the black beans with water.

  • Boil the black beans

    Put a earthen pot on the stove, add the prepared black beans, 180g of rock sugar, 1 tablespoon of soy sauce, 1 teaspoon of baking soda, and then boil over medium heat.

    After that, turn off the heat and cover tightly to let the beans steep until the mixture is completely cool.

  • Boil black beans

    Cut a piece of foil with a radius equal to that of the pot, then cut a round hole in the middle and place it on the surface of the pot with black beans.

    Next, turn on the stove and continue to boil the mixture on low heat for another hour until the beans are soft.

    After 1 hour, turn off the stove, cover tightly, and let the pot of beans cool completely.
