Tips for choosing good tofu:
- The piece of tofu should feel light and soft; if it feels heavy, firm, slightly hard, or is too perfectly square, it should be avoided.

How to make Stewed Tofu
-
Prepare the ingredients
First, you wash the shiitake mushrooms and soak them until they expand. Crack the hard shell of the ginkgo nuts and remove the silken skin. Clean the red dates, fresh lotus seeds, and baby corn. Peel and cut the water chestnuts into halves or thirds; slice the lotus root and tofu into bite-sized pieces.
Next, you add 2 liters of filtered water and 1 cup of water used for soaking the shiitake mushrooms into a pot and bring it to a boil. Then add all the water chestnuts, lotus root, dates, baby corn, ginkgo nuts, lotus seeds, and shiitake mushrooms into the pot to cook.
-
Make the sauce
For the sauce, mix 1 full teaspoon of five spice powder, seasoning powder, soy sauce, 2 tablespoons of oyster sauce, sugar, and add 1 tablespoon of honey. Stir everything until dissolved and then pour into the pot to continue boiling.
-
Stew the tofu
Fry the tofu until golden brown on all sides, then remove and place it into the pot of broth. Wait for it to boil again, then season to taste and turn off the heat.
