How to choose fresh and delicious pork
- Observe the color: When buying pork, you must first observe the color of the meat. Fresh and delicious pork will have a light pink or light red color, while the fat will have a slightly creamy white color. Absolutely do not buy meat that is too pale or too dark, and the surface should be shiny.
- Observe the layer of fat and skin: You should choose meat that has a distinct texture of meat and fat, but they must stick together, and when you touch it, it feels hard to separate. Quality meat will have a fairly thick layer of skin and fat, specifically the fat should be about 1.5 – 2 finger widths thick.
- Observe the elasticity: You can check the elasticity of the meat by pressing your hand into the piece of meat. If it is good meat, when you pull your hand away, the meat will return to its original shape, and no indentations will remain on the surface of the meat. Absolutely do not buy if you feel the meat is mushy and has slimy liquid oozing out.

How to prepare Grilled Pork with Air Fryer

Making Grilled Meat
Pork belly and shoulder meat should be rinsed once in water, then rub with salt and massage the meat for about 3 minutes, then rinse with water to clean thoroughly.
Next, place the meat on a cutting board, cut into bite-sized pieces, and put into a bowl with 1/2 pack of grilling seasoning (35gr), mix well, cover the bowl tightly with plastic wrap, and put it in the refrigerator for about 45 – 60 minutes.
After the pork belly and shoulder meat have been refrigerated for the proper time, take them out, arrange them in the air fryer, and grill at a temperature of 160 – 180 degrees Celsius for 10 minutes, then flip the meat and grill for another 5 minutes at the same temperature.

Making the Pork Patties
Similarly, the ground meat should also be placed in a bowl mixed with the remaining grilling seasoning and put in the refrigerator for 45 – 60 minutes.
After 45 – 60 minutes, take the ground meat out of the refrigerator, shape it into bite-sized balls, flatten them down, and then arrange the patties in the air fryer to grill for 10 minutes at a temperature of 160 – 180 degrees Celsius, then flip the patties and grill for another 5 minutes.

Making the dipping sauce and pickled vegetables
Mix the fish sauce in the ratio: 3:1:1:1, which means 3 tablespoons of water, 1 tablespoon of fish sauce, 1 tablespoon of sugar, and 1 tablespoon of vinegar (about 10ml). You can adjust it according to your family’s taste.
Peel and wash the carrot and green papaya, cut them into thin slices, mix them well with the prepared fish sauce and add 100ml of vinegar.
Next, put all the dipping sauce with carrot and green papaya into a pot, bring it to a boil, then turn off the heat. When eating, add minced garlic and chili.
