Ingredients for Durian Foam Coffee For 1 cup of coffee

How to choose ingredients
- To make your coffee fragrant and rich, you should use black coffee brewed with a filter or high-quality instant black coffee such as: G7, Netscafe, street coffee,… and avoid using milk coffee or 3-in-1 instant coffee.
- Delicious durians are those that have sweet, fatty flesh, and are not bitter. You can choose by looking at the stem end of the durian, which should be swollen, and when you tap the fruit with the handle of a knife, it should sound hollow inside, indicating that the durian is ripe and tasty.
- For this drink, you can choose either unsweetened or sweetened fresh milk.

How to prepare Durian Sponge Coffee

Separate the durian flesh
Open the durian and take out 1 – 2 segments of durian from the fruit, remove the seeds, and set the flesh aside.

Make coffee
You put 2 teaspoons of coffee powder into the filter, press the powder down tightly to extract a stronger coffee essence.
Then pour about 3 tablespoons of boiling water so that the coffee filter is full.
Cover it and catch the coffee essence into a glass.

Make durian coffee
You add 2 tablespoons of condensed milk into the glass, then pour in the amount of brewed coffee from earlier to suit your taste.
Next, add 100g of durian flesh and stir well until the durian is evenly blended into the coffee.

Make foam coffee
You add 30g of instant coffee with 3 tablespoons of sugar and 3 tablespoons of boiling water into a bowl.
Stir this mixture until it is completely dissolved, then use a whisk to beat it well.
Beat until the coffee turns lighter in color, has streaks, and when you lift the whisk, it forms peaks, and it’s done.

Complete the coffee cup
You take a nice cup, pour about 1/4 – 1/5 of durian coffee. Then add small ice cubes to almost fill the cup. Next is unsweetened fresh milk, you pour the milk just enough to cover the ice.
Finally, use a cream nozzle to pipe the foam coffee on top, or you can use a spoon to scoop the foam coffee on top as well.

Notes when making foam coffee:
- The time to whip the coffee to create foam takes a while, but to achieve the desired foam coffee, don’t give up.
- If you are using the right type of coffee but still can’t whip it to your liking, it may be due to the ratio of sugar and water not being correct. If there is too little sugar, it will be difficult for your coffee to foam or it may not foam properly and easily melt.
