Mixing the dough
Break the eggs into a bowl and beat them, then add the glutinous rice flour and mix well, knead the dough until it becomes a soft, non-sticky mass.

Cut the dough
Cut the dough into 6 pieces, then place each piece of dough on a clean table. Use both hands to roll the dough into long, even strips, then use a knife to cut the strips into many small pieces.

Shape the cake
Take each dough ball and place it in the palm of your hand, then roll it until it’s round and even. Place the dough balls on a large plate. Repeat until all the ingredients are used up.

Fry the cake
Place a pan on the stove with plenty of oil, turn on the heat to warm the oil, and you can fry the cakes on low heat. You don’t need to wait for the oil to boil before adding the cakes.
Use chopsticks to stir the cakes to keep them fluffy and evenly cooked. Continue frying for about 40 minutes until the cakes turn golden and crispy, then remove them to a plate lined with paper towels, and wait for the cakes to cool completely before proceeding to the next steps.

Put sugar and ginger juice into a pan and cook until it boils; when the ginger syrup thickens slightly, add the fried cakes and stir continuously.
After a few minutes, when the cakes start to dry and crystallized sugar appears on them, turn off the heat and stir for another 2-3 minutes until the cakes are completely dry.

Notes for successful execution
- The cakes should be fried over medium heat; if the heat is too high, the oil will splatter easily, the cakes may explode and could burn.
- Fry the cakes until they are really dry to have a dense, crispy texture from the inside out, not chewy.
- Wait for the cakes to cool completely before coating them with sugar; otherwise, the cakes will become soggy, chewy, and not tasty.
