How to choose fresh ingredients
How to choose delicious tilapia
- Choose live fish that are still healthy and feel heavy in hand.
- The fish should have shiny gray scales, without scratches or missing scales. The flesh of the fish should be firm.
How to choose fresh shiitake mushrooms
- Choose shiitake mushrooms that are brightly colored, have a characteristic aroma, and a thin paper-like layer on the mushrooms.
- Choose mushrooms with a firm stem and uniform color. The gills on the mushroom cap should be evenly spaced, beautiful, and dry.
- Choose mushrooms with moderate caps, tightly closed, and a slightly yellowish-brown color.
- Do not choose mushrooms that are bruised, have a sour or strange smell. Avoid mushrooms with wrinkles or dark spots on the cap, or that are slimy.
How to choose delicious oyster mushrooms
- Choose oyster mushrooms that are long, large, and firm.
- Avoid mushrooms with black or bruised tips, or that are slimy.
- When buying pre-packaged mushrooms, pay attention to the source and expiration date to ensure safety.
How to choose delicious enoki mushrooms
- Choose enoki mushrooms that are bright in color, have a natural aroma, and are not bruised, with stems that are not separated or mushy, and not slimy.
- When buying, check the source and expiration date on the packaging to ensure safety.
How to prepare tilapia steamed with soy sauce
-
Prepare the tilapia
Buy pre-cleaned tilapia, soak the fish in diluted salt water, then rinse several times with clean water.
Then make 2 cuts on each side of the fish to ensure even cooking and absorption of flavors when steaming.
-
Prepare the mushrooms
Chicken thigh mushrooms, fresh shiitake mushrooms, oyster mushrooms, and enoki mushrooms should be soaked in diluted salt water for 10 minutes, then rinsed thoroughly with cold water. Cut chicken thigh mushrooms into bite-sized pieces, drain enoki mushrooms, and squeeze the shiitake and oyster mushrooms to remove excess water.
-
Prepare other ingredients
Green onions peeled, washed, and cut into short pieces about 2 finger lengths.
Onions peeled, washed, and sliced thinly.
Shallots and garlic peeled, washed, and minced.
-
Sauté mushrooms
Place a pan on the stove, add 2 tablespoons of cooking oil. When the oil is hot, add 1/2 of the chopped shallots and garlic and sauté.
When the shallots and garlic turn golden, add all the types of mushrooms to sauté together. Season with 1 teaspoon of MSG, 1 teaspoon of seasoning powder, 1/2 teaspoon of salt, 1/2 teaspoon of sugar, and 1 teaspoon of fish sauce, and stir-fry for about 5 minutes.
Tip: When sautéing mushrooms, it is necessary to sauté over high heat to keep the mushrooms firm and prevent them from losing moisture, which reduces sweetness. -
Fry fish
Place a pan on the stove, add 10 tablespoons of cooking oil. When the oil is hot, add the fish and fry both sides for about 5 minutes to firm up the fish.
Tip:
- Fry the fish over low heat to ensure it cooks evenly from the inside out.
- Fry until the fish meat is firm so that when steaming, the fish is sweet, fragrant, and not fishy.
-
Making fermented soybean sauce
Put a pan on the stove with 2 tablespoons of cooking oil. When the oil is hot, add the remaining minced garlic and shallots to fry.
When the garlic and shallots turn golden, add the fermented soybean sauce and 2 tablespoons of water. Season with 1 teaspoon of sugar, 1 teaspoon of MSG, then stir well for 2 minutes.
-
Steaming fish
Place the fish in the pan with fermented soybean sauce and steam on low heat for about 7 – 8 minutes, then flip the fish over.
Continue steaming the fish for about 2 minutes, then add the sautéed mushrooms and steam for another 6 minutes.
After that, add the thinly sliced onions and steam for 2 minutes. Then add chopped scallions and 4 small chili peppers, and turn off the heat.
-
