Glutinous rice 1.5 kg Split mung beans 400 gr Durian 200 gr (2 segments) Gac 1 fruit Grated coconut 200 gr Ginger 50 gr (1 piece) Roasted sesame a little White wine 1 tablespoon Sugar 560 gr Salt a little

How to make Gấc sticky rice dumplings with durian filling

  • Prepare the glutinous rice

    Take a bowl to soak 1.5kg of glutinous rice with 1 liter of water for 6 – 8 hours.

    Then use a blender to blend the soaked rice mixture on high until smooth, then place it in a clean cloth bag hanging up or on a basket for 4 – 5 hours to let the dough dry completely.

    Tip:
    • You can use pre-packaged glutinous rice flour to save time, but using freshly ground rice will make the dumplings stickier and more fragrant.
    • Avoid insufficient soaking time; you can soak it overnight before proceeding to process.
    • To dry the dough faster, you just need to place a heavy object on the cloth.

  • Prepare the coconut milk and cook the mung beans

    Take another bowl and combine 200g of grated coconut with 150ml of warm water to squeeze the coconut milk into a pot containing 400g of peeled mung beans. Continue to squeeze the coconut milk 2 – 3 more times until it just covers the surface of the mung beans.

    Then put the pot of mung beans on the stove over medium heat and cook for 15 – 20 minutes. As the coconut milk reduces, lower the heat and cook for another 5 minutes before turning off the stove.

    Tip: To avoid burning the mung beans, do not cook over high heat.

  • Make the durian bean filling

    Using the mung bean pot, mash the beans and add 4 tablespoons of sugar along with the flesh of 200g of durian (2 segments), then mix the mixture well and roll into bite-sized balls.

    Tip: Depending on your preference, you can add more durian, but do not add too much as it may become overwhelming.

  • Extracting gac color

    Take the gac fruit, cut it in half, and use a spoon to scoop out the flesh inside. Then remove the seeds and put the gac flesh into a blender to puree at a medium level, then transfer it to a plate along with 1 tablespoon of white wine and mix well.

  • Mixing the dough

    When the dough is dry, divide it into 2 parts to mix. For the first part, add 100ml of warm water, and for the second part, add the gac water.

    Then use your hands to knead both dough portions until they are smooth and elastic and no longer stick to your hands.

    Tip: If the dough is too wet, you can add sticky rice flour to adjust.

  • Cooking the syrup

    Peel and julienne the ginger. Then place another pot on the stove with the remaining sugar, 500ml of water, and a bit of salt, cooking over low heat for 10 minutes. Once the sugar has dissolved, add the remaining 50g of cut ginger and cook for another 10 minutes.

  • Shaping the sticky rice balls

    Take a moderate amount of dough, flatten it out, then place the durian filling in the center and roll it into a ball. Continue this until all the dough and filling are used up.

    Tip:
    • To prevent the sticky rice balls from cracking when boiling, make sure to seal the dough tightly without letting air inside.
    • For any leftover dough, you can roll it into small balls and boil them together; they’re also very tasty.
    • To avoid the dough drying out, you should shape and boil it at the same time.

  • Boil the sticky rice balls

    Place another pot on the stove with 1 liter of water over medium heat. When the water boils, add the sticky rice balls and boil for 10 – 15 minutes. When the sticky rice balls float to the surface, take them out and transfer them to a pot of sugar water to cook for another 10 minutes before serving.

    Tip:
    • To avoid clouding the sugar water and making the sticky rice less delicious, you should boil the sticky rice balls separately.
    • To prevent the Gac color from bleeding, you should boil the Gac sticky rice balls last.
