How to make Cream Puff with Crispy Shell

Beat butter and sugar
Crush 35g of unsalted butter until smooth, then add 35g of sugar and mix well until combined.

Mix the dough and roll out the crispy crust
Next, sift 35gr of flour into the butter bowl and continue mixing until the mixture is smooth.
Then, place the mixed dough between 2 sheets of parchment paper, then use a rolling pin and put the dough in the refrigerator.

Mix the puff pastry dough
Put a pot on the stove, add 30gr of unsalted butter, 33ml of water, 33ml of unsweetened fresh milk, and a little salt. Heat the mixture over medium heat until the butter melts, then turn off the heat.
Next, add 40gr of flour and continue to mix well until the dough forms a homogeneous mass. After that, turn the heat to low and mix the dough for an additional 3 minutes until it turns a golden color, then turn off the heat.
Let the dough cool slightly, then gradually add 75gr of chicken eggs and stir well until the mixture is smooth.
Tip:- Be sure to stir continuously to avoid burning the dough.

Bake the cake
Preheat the oven to 190 degrees Celsius for 15 minutes.
Prepare a baking tray lined with parchment paper, then pipe the choux pastry onto the tray in many equal small round shapes.
Next, use a small round cutter to cut out the crispy shell dough and place this piece on top of the choux pastry.
Place the tray of pastries in the oven for 13 – 15 minutes at 190 degrees Celsius. Then, lower the oven temperature to 160 degrees Celsius and continue baking for an additional 15 – 17 minutes.

Whip cream cheese
First, put 170ml of whipping cream and 35g of sugar into a bowl, and use a mixer to whip the mixture until soft peaks form, about 50 – 60%. At this point, the cream will be thicker than before, forming a pattern, but not clearly defined, and lifting the whisk will not create peaks.
Blend 300g of cream cheese until smooth, then add 1/4 teaspoon of vanilla extract, and mix in the whipped cream mixture until well combined.
