Ingredients for Thai-style Cheese Skewers Serves 4 people

Minced pork 500 g Slices of cheese 5 slices Garlic 20 g Pepper 10 g Coriander roots 20 g Fish sauce 20 ml Palm sugar 50 g Soy sauce 20 ml Cornstarch 50 g Oyster sauce 20 g Coconut milk 50 ml

Pork can be bought to chop at home or you can buy pre-ground pork to save time!

How to choose good pork

  • You should choose pork that is bright pink, has no strange smell, and has clear white fat; avoid pork that is pale and has a foul smell.
  • You can press the meat with your hand; if you observe that the meat bounces back immediately, leaves no indentation, and is dry and not sticky, this indicates it is good meat.
  • Good pork should have even fibers, be firm, and not exude liquid or be slimy.
  • When buying meat, you should ask the seller to cut the meat along the grain and avoid choosing meat with small white cysts interspersed between the fibers, as it may indicate the meat is infected with tapeworms, which can negatively affect your health when consumed.

  • Make the marinade sauce

    Use a mortar to grind 20g of garlic, 10g of pepper, and 20g of coriander roots.

    Add 20ml of fish sauce, 50g of palm sugar, 20ml of soy sauce, 50g of cornstarch, and 20g of oyster sauce together, and mix well to dissolve all the ingredients.

    • It is advisable to add ingredients in order to avoid splashing when grinding with a mortar.
    • You should grind firmly from top to bottom in a straight line for quicker softening of the ingredients.

    Add the marinade mixture to the minced meat, use your hands to mix well so that the meat absorbs the seasoning evenly.

    Take a suitable amount of meat, use your hands to press and shape it slowly into a rectangular piece. Place it in the freezer for about 30 minutes to firm up the meat.

  • Grill the meat

    When the meat begins to freeze and has a certain firmness, use bamboo skewers to skewer each piece of meat and place it on the grill.

Tips for successful execution
