Ingredients for Laughing Cow Cheese Sponge Cake For 4 people

All-purpose flour 50 gr (type 11 flour) Cornstarch 15 gr Butter 10 gr (vegetable butter or unsalted butter) Cheese 60 gr (Laughing Cow type) Chicken eggs 4 eggs Lemon juice 2 ml Sugar 50 gr Salt a little Water 20 ml

For this cake, you should prioritize buying flour type 8 (with a protein content of 8 – 9%) to achieve a soft and fluffy texture. Alternatively, if you cannot find flour type 8, you can substitute it with all-purpose flour (flour type 11).

  • Melt the Laughing Cow cheese mixture

    Place a pot on the stove, add 10g of butter and 60g of cheese, stir well over low heat until the mixture is smooth, then turn off the heat.

    Next, add 20ml of water, stir the mixture well once more to complete.

    Tip: To prevent the cheese from drying out, remember to cover it tightly after stirring the mixture!

  • Whisking Whole Eggs

    Put 4 eggs, 2ml of lemon juice into a large bowl, and use a mixer on low speed to blend the eggs together.

    Next, add 50gr of sugar and continue mixing at low speed until the sugar dissolves. Once the sugar has dissolved, increase the speed to medium and whisk until the mixture turns a creamy white color, lifting the whisk so that the mixture flows like a ribbon (Ribbon Stage) is achieved.

    Then, filter the cheese mixture into the egg bowl, and use a spatula to mix it evenly.

  • Mixing the Cake Batter

    Mix together 50gr of flour, 15gr of cornstarch, and a pinch of salt.

    Next, divide the flour mixture into 2 parts, sifting each part into the whisked egg bowl and mixing well.

    Use a spatula to gently fold the mixture from the bottom to the top. Bring the spatula down to the bottom of the bowl, lifting the heavier ingredients up and folding them to the side. Continue this process until the mixture is well combined.

  • Pouring into the mold and baking the cake

    Preheat the oven to 180 degrees Celsius for 10 minutes.

    Brush a thin layer of cooking oil into the mold, then pour the cake batter into about 1/2 the height of the mold.

    Gently tap the cake mold on the table a few times to break the large air bubbles. Next, bake the cake at 175 degrees Celsius for 25 minutes, in dual heat mode.

    After baking, turn the cake upside down onto a rack for about 5 minutes to cool completely before removing it from the mold.
