How to cook Cheese Baked Oysters

Prepare the oysters
After purchasing the oysters, wash them thoroughly with diluted salt water along with lemon juice or vinegar, then drain them.
Tip: You can buy pre-shucked oysters to save time on preparation!

Marinate the oysters
Marinate 300g of oysters with 1 spoon of sugar, 1/2 teaspoon of seasoning, 1/2 teaspoon of ground pepper, 2 tablespoons of ketchup, and 1 tablespoon of chili sauce for 15 minutes to allow the oysters to absorb the flavors evenly.

Cook the oysters
Heat a pan over medium heat until hot, then add 20g of unsalted butter and stir until the butter is completely melted.
Next, add in 1 onion, 1/2 American corn, and 3 pre-prepared okras, and stir until the ingredients are fully cooked for about 5 – 7 minutes.
Then, place sausages and oysters on top, crack 1 egg over, and let it sit for 1 minute.
Finally, just sprinkle Mozzarella cheese on top, wait for it to melt completely, then turn off the heat, sprinkle pepper, and garnish with green onions and cilantro on top to finish.
Tip: If you don’t have a cast iron pan, you can use a clay pot to retain heat for the dish.

- If you buy fresh oysters with shells, you should soak them in water for about 2 hours to soften the mud on the outside of the shell.

- After the shell is clean, use a sharp knife to insert into the gap of the oyster and forcefully separate the two shells. Then, rinse again with clean water to remove any tiny shell fragments before taking out the meat.
- When prying open the oyster shell with a sharp knife, be careful not to let the tip of the knife touch the meat. This can break the oyster’s water pouch, causing it to dry out and lose its sweetness.
- The oyster shell is quite hard and sharp, so you need to wear gloves when prying it open to avoid injury.
- Once you have finished cleaning the oysters, you should cook them immediately because fresh oysters will die very quickly and lose their freshness.
