Ground pork shoulder 800 g Chicken eggs 2 pieces Bell peppers 1 kg Mozzarella cheese 200 g Filtered water 200 ml Cornstarch 1 tablespoon Garlic 1 bulb Accompanying vegetables 100 gr (Cilantro/ parsley/…) Shallots 5 bulbs Dried shiitake mushrooms 8 gr (or dried oyster mushrooms) MSG 1/2 teaspoon Sesame oil 1 tablespoon Cooking oil 1 tablespoon Cornstarch 1 tablespoon Seasoning 10 gr (salt/sugar/ground pepper)

How to prepare Grilled stuffed bell peppers with cheese

  • Prepare the ingredients

    Wash the bell peppers, let them drain, then use a knife to cut off the stem. Next, carve a round hole where the stem was cut off, removing all the seeds and pulp inside. The remaining flesh of the pepper at the stem can be minced or blended into a paste.

    Dry shiitake mushrooms, wash off the dirt, soak them in warm water until soft, then cut off the stems and chop them finely.

    Peel the garlic and shallots, then chop them finely.

    Tip for soaking shiitake mushrooms to be soft and clean from sand:

    • First, you need to soak the shiitake mushrooms in hot water at 60 – 80 degrees Celsius for about 7 – 10 minutes to let them expand.
    • Then gently rub them with your hands to clean off all the dirt, and rinse with clean water to prepare for cooking.

  • Stuffing the filling

    Put 800g of ground pork shoulder, 1/2 teaspoon of salt, 1/2 teaspoon of seasoning, 1 teaspoon of sugar, and 1/2 teaspoon of pepper into a bowl. Mix well to allow the meat to absorb the seasoning evenly.

    Heat a pan on the stove, add cooking oil and some minced garlic and shallots. Stir until the garlic and shallots are golden brown.

    Add the chopped wood ear mushrooms, finely chopped green onions, 100g of Mozzarella cheese, 2 chicken eggs, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of sesame oil, and the fried garlic and shallots to the bowl of meat, along with 1/2 of the finely chopped chili.

    Use your hands to mix the mixture for about 5 minutes until all the ingredients are well combined and cohesive.

    Firmly stuff the filling inside the bell pepper.

  • Grilled Bell Pepper

    Preheat the oven to 200 degrees Celsius for 10 minutes.

    Arrange the bell peppers on a baking tray and place them in the oven. Grill the peppers at 200 degrees Celsius for about 30 minutes.

    Use a toothpick to pierce the filling. If it feels dry and does not stick to the toothpick, the filling is cooked.

    Then, add Mozzarella cheese on top of the peppers and grill at 180 degrees Celsius for 10 minutes until the cheese melts and turns a beautiful golden color.

  • Make the Sauce

    Add 1 tablespoon of cooking oil, chopped green onions, some garlic, shallots, and the remaining minced chili into a pan and sauté until fragrant.

    Next, add the leftover meat filling and stir until the meat is cooked. Then add 200ml of water and 2 tablespoons of soy sauce, and bring the mixture to a boil.

    Dissolve 1 tablespoon of cornstarch in 2 tablespoons of water and stir well.

    Slowly add the cornstarch mixture into the sauce, stirring continuously until the desired thickness is achieved.

  • Do not choose soft, slimy shrimp that have a cloudy color, with the head and legs no longer firmly attached to the body, as these shrimp have been stored for too long and are not fresh.

  • Fresh squid has a shiny color, with the brown parts being dark brown and the white parts as white as milk. When gently shaken, the squid appears shiny and reflective.
  • Pressing the body of the squid should feel elastic and firm. The tentacles and arms of the squid are securely attached. The squid’s eyes are clear, with visible pupils, and there is no sliminess.

    3 bell peppers, each cut into slices about 1cm thick from the stem, keep these pieces to use as decorative lids.

    Put into a large bowl and mix well the ingredients including: shrimp and squid, onions and bell peppers, butter, flour, thyme, and 1 tablespoon of mayonnaise.

    You spoon the mixed shrimp and squid filling into the bell pepper, place a peeled shrimp on top, and finally sprinkle about 15g of Mozarella cheese on top.

    You do the same with the remaining bell peppers and arrange them on the grill.

    Preheat the oven for 10 minutes at 190 degrees Celsius to stabilize the temperature.

    Place the stuffed bell peppers and the lids in the oven and grill for 20 minutes at 180 degrees Celsius, then switch to the broil setting and grill for another 5 minutes to finish.

    Tip: Broiling for an additional 5 minutes helps the cheese melt to a golden aroma while keeping the bell peppers firm.

  • For this dish, you should choose male bell peppers (those with a tail that is divided into 3 parts) to help the dish be more flavorful and prevent the pepper from becoming crumbly or mushy when grilled.
  • Additionally, you should only buy bell peppers from reputable grocery stores or large supermarkets to ensure the products are quality-tested and have clear origins.
