Ingredients for Grilled Vegetarian Eggplant Rolls Serves 2 – 3 people
Eggplant 400 gr Tofu 200 gr
Vegetarian seasonings: sugar, seasoning powder, salt, vegetarian fish sauce, cooking oil, vegetarian grilling sauce
Utensils: bowls, pan, oven, spoon and chopsticks
Tips for choosing ingredients:
Choosing tofu:
- Good tofu pieces, made naturally, have an off-white or milky white color, with no signs of turning yellow like tofu mixed with gypsum.
- If you don’t buy pre-made tofu, you can make tofu at home.

Tips for choosing good eggplants:
- Eggplants that are not fresh when processed will not be sweet and fragrant, while overripe eggplants contain many seeds, reducing the quality of the dish. Therefore, when buying eggplants, pay attention to the cap to determine freshness. If the white area between the cap and the skin of the eggplant is connected, that eggplant is fresh, young, and tasty. Eggplants that feel hard and their color changes from pinkish purple to light purple are overripe and should not be chosen.
- Choose eggplants that are dark in color, firm, and have shiny skin for better taste.
How to make Grilled Vegetarian Eggplant Rolls
-
Prepare the ingredients
Gently wash the tofu with water. Cut it into small square pieces as shown.
Wash the eggplant thoroughly. Cut the eggplant in half horizontally and then slice it into long pieces as shown, about 1mm thick.
Marinate the eggplant with 1 teaspoon of salt, mix well, and let it sit for about 5 minutes for the eggplant to absorb the flavor. After marinating, wash the eggplant thoroughly with water to remove excess salt.
Tip:
Cutting the eggplant thinly will make it easier to roll.
Using a peeler helps you do it quickly and cut the eggplant pieces thinner.
Marinating the eggplant with salt helps to reduce its bitterness, prevents it from browning, and makes it softer when rolled.
-
Stir-fry the filling
Heat a pan on the stove, add about 2 – 3 tablespoons of oil, if you like onions, you can add a little onion to fry until fragrant, then stir-fry with the tofu until the tofu is cooked, firm, and golden.
Add 1 teaspoon of grilled meat marinade, stir gently until cooked and evenly coated.
Tip: You can replace the tofu with yam (jicama) or any other vegetables, mushrooms, depending on your family’s taste.
-
Eggplant Rolls
After washing the eggplant with water and letting it drain, take each piece out, fill it with tofu inside, and roll it up. Then, you skewer it as shown in the picture to prepare for grilling.
-
Grilling Vegetarian Eggplant Rolls
Prepare hot charcoal with a grill or grill using a stovetop, oven on low heat for about 5 minutes, until the eggplant softens and releases a fragrant aroma, indicating that the eggplant is cooked.
Tip:
- When grilling, remember to turn regularly to avoid burning the eggplant!
- It’s advisable to brush oil on the grill or tray (if using an oven) to prevent the eggplant from drying out and sticking to the grill or tray.
-
