How to choose fresh and delicious chicken
For pre-prepared chicken
- You should choose chickens that have an even yellow color and a darker color in areas like the wings, breast, or back. The chicken usually has a compact, firm body and a narrow breast.
- Pre-prepared chickens often have thin, smooth skin, a certain elasticity, and do not have bruises or purple, red spots.
For live chickens
- Choose those with bright red combs, lively eyes, and agility. The feathers should be smooth and close to the body, with a sharp, small beak and no discharge.
- The chicken legs should be small, neat, and the skin should be evenly bright yellow. When parting the feathers, the chicken skin should be soft, thin, and have some large yellow streaks under the armpits and breast.
How to make Coconut Braised Chicken

Prepare the chicken
After buying the chicken, soak it in salt water for about 10 – 15 minutes before proceeding with the preparation.
Then you can use alcohol to gently massage the chicken and rinse it with cold water. Doing this will help eliminate bacteria and the fishy smell of the chicken meat.
After that, cut the chicken into large pieces; one chicken can be cut into 5 – 6 parts to make the dish easier to prepare.

Prepare other ingredients
Peel the shallots, chop them finely, and then mince them.
Also, peel the garlic, crush it, and chop it finely.
Wash the chili briefly with water and then mince it.

Marinate the chicken
After the chicken is drained, use a fork to poke it so that it absorbs the seasoning evenly and cooks faster.
Marinate the chicken with 2 teaspoons of soy sauce, 1 teaspoon of sugar, 1 teaspoon of seasoning powder, and 1/2 teaspoon of pepper.
Add the minced garlic, shallots, and chili together. Wear nylon gloves and mix well.
Add 2 tablespoons of annatto oil, rub it gently so that the oil is evenly absorbed by the chicken, then let it sit for 20 – 30 minutes for the chicken to absorb the seasoning.

Place a pan on the stove and add 1 tablespoon of annatto oil, then heat it up.
Once the oil is hot, add the chicken pieces one by one and fry over medium heat until slightly firm, then add the remaining shallots, chili, and marinade to the chicken.
Finally, add the coconut water, continue to simmer on low heat until the coconut water gradually reduces and absorbs into the chicken, and it’s done.
