Ingredients for Chicken Mushroom Cheese Steamed Buns For 2 people

How to make Chicken Mushroom Cheese Steamed Buns

Mix the dough
Crack 1 egg into a bowl and beat well, saving a little egg to brush on the buns, then add 80ml of unsweetened fresh milk, 3gr of yeast, and 1/2 tablespoon of sugar, and mix well.
Add 200gr of all-purpose flour and 1/4 teaspoon of salt and mix briefly.

Kneading the dough
Use your hands to knead the dough until it forms a ball, then add 30g of butter and continue kneading until the dough is smooth and no longer sticky (about 15 – 20 minutes).
If during the kneading process the dough feels a bit dry, you can add 10 – 15ml of unsweetened fresh milk.
Place the dough in a bowl, cover it tightly with plastic wrap (or a cloth), and let it rise for about 40 minutes to 2 hours until it doubles in size.
Tip:
You can check the dough by taking a piece and stretching it; if it forms a thin membrane without tearing, the dough is ready.

Preparing the filling ingredients
Place a pan on the stove, add the cleaned chicken breast and boil with 60ml of water for about 10 – 15 minutes on low heat until the water evaporates.
Remove the chicken breast, let it cool, and shred it by hand.
Soak the shiitake mushrooms until they expand, then chop them into small pieces.
Add 1 tablespoon of oyster sauce, 1 tablespoon of soy sauce, 1/2 tablespoon of sugar, 1 teaspoon of chili powder, 1/4 teaspoon of pepper, 1 tablespoon of tapioca flour, and the chopped shiitake mushrooms into the bowl with the chicken. Mix well to allow the mixture to soak up the seasonings.

Sauté the filling
Place a pan on the stove, add garlic and fry until fragrant, then add chicken and shiitake mushrooms and sauté briefly. Add 40ml of water and sauté for 2-3 minutes, then transfer the chicken to a bowl (you can season with a little seasoning powder while sautéing to suit your taste).
Divide the chicken and shiitake mushrooms into 6 equal parts and let cool.

Wrap the buns
After the dough has doubled in size, take it out, and press down firmly to release the air. Then roll out the dough and divide it into 6 equal parts.
Dust a little dry flour on the outside and roll each piece of dough thin (do not use too much flour on the outside as it will cause the buns to dry out).
Place the filling that has been divided into portions inside the dough and fold the 4 edges of the bun symmetrically together. Continue to fold the 4 edges until the bun completely encloses the filling, then use your hands to gently shape the bun into a round shape.
Place the buns on a tray and continue to let them rise for the second time until they double in size (about 40 minutes to 2 hours).

Baking the bread
After the second proofing, use scissors or a knife to cut a cross on the surface of the bread.
Add 10ml of fresh milk to the eggs that were set aside at the beginning, stir well, and use a brush to coat the surface of the bread.
Place shredded cheese in the center of the bread.
Preheat the oven to 180 degrees Celsius for 15 minutes before baking the bread to stabilize the temperature.
Place the bread in the oven at 170 degrees Celsius for about 15 – 20 minutes. Remove the bread and brush a layer of butter on top to make it softer and more fragrant.
Cover the baking tray with a cloth for about 10 minutes to keep the bread soft.

Final product
The chicken mushroom cheese bun is soft, with the sweet taste of the bread and the savory filling combined to create a wonderful dish.
How to store steamed buns:
- Let the buns cool, wrap them in plastic wrap, then place them in a ziploc bag (the bag with a sealing edge), remove all the air, and put them in the refrigerator’s cool compartment.
- When eating, you just need to microwave for 1 minute (depending on the power of your microwave) or put them in a steamer to heat up the buns for eating.
- You can also store the buns in the freezer and heat them up when eating.
