How to choose fresh and delicious chicken breast
- You should choose pre-prepared chicken breasts with a rosy skin and naturally yellow meat.
- When you touch the chicken meat, it should feel dry and have good elasticity, without leaving a dent where you press your finger.
- If you buy skinless chicken breast, observe the layer of fat on the chicken. You should choose the fat that is white for better taste.
- You should buy chicken breast pieces with fewer striations in the meat. The more striations there are, the less fat and protein there is, and these striations will make it harder for the chicken to absorb seasonings and sauces during cooking.
- You should not buy chicken breast pieces that have bruises or unusual colors, and smell bad, as this indicates poor quality chicken.

How to make shredded chicken

Prepare the chicken breast
To eliminate the fishy smell of the chicken breast, you use a knife to remove the skin, wash it with water, then rub salt evenly on the chicken breast and rinse it again with clean water.
After that, cut the chicken breast into small pieces.
Simple way to clean and eliminate the bad smell of chicken:
- To avoid the smell, you need to remove all feathers, including fine hairs (down) to keep the chicken white, clean, and reduce the smell.
- Mix vinegar and salt in a ratio of 2 salt to 1 vinegar, then apply it all over the chicken, rubbing several times, and then rinse thoroughly with clean water or rub lemon and salt on the chicken skin, or use a bit of ginger and white alcohol to rub on the chicken to eliminate the odor.

Boil and Pound Chicken Breast
Before boiling the chicken, prepare a pot of water on the stove. Then, peel the onion, cut it in half, peel the ginger, and slice it thinly.
Next, add the following ingredients to the pot of water: chicken breast, onion, ginger, and 1/2 tablespoon of salt. Boil the chicken over high heat until the water in the pot boils, then skim off the white foam.
Once the water in the pot is boiling, reduce the heat to low and boil the chicken for about 7 more minutes, then remove the chicken and place it in a bowl to cool.
Put the chicken into a mortar and use a pestle to pound it until it is shredded. Alternatively, you can tear the chicken into small pieces by hand first, then use the pestle to shred it.
Note: After boiling the chicken, remember to keep the chicken broth for the next step.

Making shredded chicken
Place a pan on the stove, turn on the heat to medium to heat the pan.
Next, add the chicken to the pan and stir well. Season the chicken in the pan with 1/2 tablespoon of monosodium glutamate, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of salt, 1 tablespoon of fish sauce, 1/2 tablespoon of sugar, and 1/2 tablespoon of pepper. Mix well and sauté the chicken mixture over low heat.
After about 10 minutes of sautéing the chicken, add 2-3 tablespoons of the chicken broth to the pan, so that the chicken doesn’t burn while cooking.
Finally, keep sautéing the chicken until it turns golden and fluffy like shredded meat (ruốc).
