Ingredients for Taiwanese Shredded Pork For 4 servings

Pork shoulder/lean pork 0.5 kg Small chili 3 pieces Bay leaves 3 leaves Star anise 2 pieces Cinnamon 2 sticks Uncut shallots 2 bulbs Red dates 3 pieces Large apple 1/2 piece ( or 1 small apple) Rice wine 1 cup (small cup) Soy sauce 2 teaspoons Oyster sauce 1 teaspoon Cooking oil 2 teaspoons Chili powder 1 teaspoon Five spice powder a little Char siu powder 1 teaspoon (or 1 teaspoon char siu sauce) Sugar 50 gr Seasoning powder 1 teaspoon Fine sea salt a little

Product Information

  • You can use non-stick aluminum pan with induction base 26 cm Elmich Coloseum Y1 EL-3720 to make Taiwanese pork floss more easily.
  • The pan is made of high-quality aluminum imported directly from Italy, with a surface coated in Whitford Xylan non-stick stone pattern that can withstand temperatures up to 380 degrees Celsius.
  • The handle is wrapped in heat-resistant plastic, which does not get hot when moving the pan, designed to fit comfortably in hand.
  • The non-stick pan has a flat base, good heat conduction, cooks quickly, and features a non-slip design to keep the pan stable on the stove.

How to Make Taiwanese Pork Floss

  • Prepare and Simmer the Pork

    After purchasing the meat, clean it, then boil it in hot water for about 2 minutes, then remove and rinse. Next, cut the meat into large pieces along the grain to prevent the floss from becoming crumbly.

    Then, marinate the meat for about 15 minutes with ginger, dried onion, red dates, apple, bay leaves, star anise, cinnamon, chili, rice wine, and a pinch of salt. You can add chopped chili if you want to make a spicy version.

    Put the meat in a pressure cooker, add enough water to just cover the meat, and simmer for about 10 – 15 minutes until the meat is tender.

  • Shred the pork

    After simmering, take the meat out and put it into a mortar, gently pound it to soften the meat fibers.

    If you have a dough mixer at home, you can shred the meat into larger pieces and put it in the mixer for about 20 minutes to shred it into smaller pieces. Or you can simply use a fork or your hands to shred the meat into small pieces.

  • Mix spicy sauce and marinate the meat

    Prepare the marinade mixture including: 1 teaspoon of char siu sauce/powder, 2 teaspoons of soy sauce, 1 teaspoon of oyster sauce, 50g of sugar, a little five-spice powder, 2 teaspoons of cooking oil, 1 teaspoon of seasoning powder, and chili powder, then stir well.

    After that, add the shredded meat into the sauce mixture, use gloves to mix well, and marinate for about 30 minutes to allow the meat to absorb the spices.

  • Stir-fry the meat to make shredded pork

    Place a pan on the stove, add the marinated meat, and stir-fry over medium heat until the meat is dry of marinade. When the meat is no longer wet, reduce the heat and stir constantly until the meat is dry and fluffy.

    Note: Do not stir-fry the meat too dry. Depending on each household’s taste, you can add more marinade or add about 10 – 20 ml of water when stir-frying the meat.

    Wait for the pork floss to cool completely, then put it in an airtight container to store in the refrigerator. When eating, thaw it in the cool compartment or if you want it hot, you can put it in the microwave for about 30 seconds.

    Spicy Taiwanese pork floss is delicious, attractive, and flavorful. The pork floss is fluffy, chewy, and beautifully golden, and when you eat it, you will taste the natural sweetness of the pork, mixed with the rich, salty, and spicy flavors of well-seasoned spices.
