  • Prepare the chicken

    Wash the chicken thoroughly with water, then rub the chicken meat with a little salt for about 10 minutes to remove the fishy smell. After 10 minutes, rinse the chicken with water and let it drain.

    • Method 3: Massage the chicken meat with 1 crushed ginger root and a little white wine, then let it marinate for about 30 minutes before rinsing with clean water.

  • Prepare other ingredients

    First, peel the onion clean, then wash it and cut it into wedges. Wash the ginger, then cut it into small pieces and crush it.

    Next, wash the lemongrass and use a knife to cut the lemongrass into small sections and crush it. Peel the garlic and chop it finely.

    After that, cut 5 chili peppers into small pieces. Finally, clean the green onions, remove any wilted parts, and cut them in half.

    Stuff half of the prepared onion, ginger, lemongrass, and green onion into the chicken’s belly. Set the remaining half aside.

    After stuffing the ingredients into the belly, use toothpicks to pin parts like the head, wings, and legs to secure the shape of the chicken.

  • Make the dipping sauce

    Put 120g of brown sugar and 150ml of fish sauce into a bowl. Next, add 70ml of filtered water and 2 teaspoons of seasoning powder.

    Then, add minced garlic and chopped chili into the dipping sauce bowl and use a spoon to stir well to combine the ingredients.

  • Cook the chicken

    Place a pot on the stove, add half of the prepared onions, ginger, lemongrass, green onions, and the remaining 5 whole chili peppers into the pot.

    Next, place the chicken into the pot and slowly drizzle the prepared dipping sauce over the chicken. After drizzling, cover the pot and cook the chicken over medium heat for about 10 minutes.

    After 10 minutes, open the lid and drizzle a little more dipping sauce over the chicken, then cover the pot again and cook for another 5 minutes.

    Every 5 minutes, open the pot and drizzle dipping sauce over the chicken. Repeat this process about 3 times.

    Finally, to check if the chicken is cooked, use a chopstick to poke the chicken. If the chopstick goes through easily, it means the chicken is tender; if not, continue cooking!

  • Drizzle sauce over the chicken

    After cooking, remove the chicken to a plate. The remaining fish sauce in the pot should be continued to be simmered until the mixture thickens slightly to make the sauce.

    Finally, simply spread the sauce evenly over the chicken, and the chicken in fish sauce is complete.
