- You should choose pre-packaged chicken breasts that have a rosy skin and naturally yellow meat.
- When touching the chicken breast, it should feel dry and have good elasticity, not leaving a dent where you press your finger.
- If you buy skinless chicken breast, check the layer of fat on the chicken. You should choose the fat that is white for better taste.
- You should choose chicken breasts that have fewer stripes in the meat fibers. The more stripes there are, the less fat and protein it contains, and these stripes will make it harder for the chicken to absorb seasonings and sauces during cooking.
- You should not buy chicken breast pieces with bruises or unusual colors, or that smell foul, as these indicate low-quality chicken.

Prepare the chicken breast
Wash the chicken breast fillets with diluted salt water and then rinse with clean water. Next, cut the meat into thin slices about 1/3 of a finger’s width along the grain of the meat to prevent it from falling apart.
How to eliminate the odor of chicken breast- After rubbing with salt, you can use a mixture of wine and sliced ginger, crush it, and rub it all over the chicken breast again to help eliminate odors and impurities. Rinse well and let it drain.
- Alternatively, you can add lemon to the water, soak the chicken breast for 15 – 20 minutes. Then remove it, rinse with cold water, and let it drain.

Marinate the chicken
After slicing the chicken, you marinate it with 3 tablespoons of fish sauce, 1 teaspoon of salt, 1 tablespoon of sugar, along with a bit of sliced lemongrass to enhance the flavor of the chicken.

Note: You should stabilize the oven temperature before putting the chicken in to grill for about 10 minutes at a temperature of 200 degrees Celsius -

After 10 minutes of grilling the chicken in the oven, you take the chicken out and put it into a blender. Depending on your preference, you can blend it finely or leave some chicken pieces to serve your cooking needs.
Then, put the minced chicken in a pan and stir-fry continuously over medium and low heat until golden and dry.
