How to Choose Fresh Ingredients
How to choose fresh chicken breast
- To choose good chicken breast, select pieces with white skin and light pink meat as these are from mature chickens and will be chewy and delicious.
- When pressed, the meat should have elasticity, not be soft or mushy, and the skin and fat should be firmly attached to the meat.
- Do not choose pieces that have an unpleasant odor or are slimy as these may be spoiled chicken breasts.
How to choose fresh and delicious avocado
- It is advisable to choose avocados with small stems and still fresh, as they are just ripe.
- Choose avocados that feel firm in hand. The outer skin should be plump, without any unusual marks or hollow spots, or damage.
- You should also choose green-skinned avocados with speckles of yellow on the skin because they will have a higher fat content and the flesh will be creamier and richer. Meanwhile, avocados with purple skin will not be as rich and tasty.
- Pay attention to selecting long avocados that feel firm in hand; these will have thicker and tastier flesh.
How to choose fresh and ripe mango
- Good mangoes are those with uniformly yellow skin, smooth, without any roughness or tiny blemishes on the skin.
- When pressed, they should feel firm, not mushy, and the stem should still be hard, not broken or detached from the fruit.
- A pure, gentle fragrance indicates naturally ripened mangoes; conversely, if there is a strong chemical smell, do not buy them.
How to choose fresh lettuce
- For salad mixing, you should choose the romaine type of lettuce due to its crunchy sweetness and ease of absorbing salad dressing flavor.
- Select lettuce heads that are tightly closed, with fresh green leaves, showing no signs of wilting or bruising.
- It is best to buy lettuce heads packed in supermarkets or stores that sell clean vegetables to ensure safety for your health.
How to make Grilled Chicken Salad with Mango
-
Prepare and grill the chicken breast
Chicken breast bought should have the skin removed (if any), washed with diluted salt water, and then rinsed with clean water. Then cut it in half lengthwise, marinate with 1 teaspoon of salt and 1/2 teaspoon of pepper.
Place a pan on the stove, add 1 tablespoon of olive oil, then set to medium heat and place the chicken breast in to grill. Grill each side of the chicken breast for about 3 minutes until the chicken pieces are slightly charred and have a golden color.
Next, remove the chicken, wait for it to cool, then cut into bite-sized pieces.
-
Prepare the vegetables and fruits
Lettuce bought should be washed clean, cut off the roots, and remove any wilted parts, then cut into bite-sized pieces.
Avocado and mango should be peeled to only take the flesh, and cut into thin slices.
Cucumber and cherry tomatoes should be washed clean. Cut the cucumber into small cubes, and halve the cherry tomatoes.
Shallots and garlic should be peeled, washed clean, then slice the shallots thinly and finely chop the garlic.
Coriander should be cut off the roots, washed clean, and then chopped finely.
-
Make salad dressing
You mix the salad dressing consisting of 7 tablespoons of olive oil, 3 tablespoons of apple cider vinegar, 2 teaspoons of yellow mustard, 2 teaspoons of honey, 1 teaspoon of salt and 1/4 teaspoon of pepper along with minced garlic.
Then you stir well to combine the mixture evenly.
-
Mix chicken salad
Place the lettuce in a bowl and then arrange pieces of chicken breast along with avocado, mango, cucumber, cherry tomatoes, red onion, and cilantro on top, sprinkling 5g of sliced almonds over.
Next, drizzle the dressing evenly over the salad and mix well to ensure all ingredients are coated with the dressing to finish.
