- If buying live chickens, choose those that move actively, have shiny feathers, red combs, smooth bright beaks, and straight slender legs.
- Do not buy chickens that stand lethargically, have frizzy feathers, runny eyes and noses, bruised legs, or pale purple or black bruised combs.
- For pre-processed chickens, choose chicken meat that has the characteristic yellow skin, looks fresh, thin, smooth, and has good elasticity. The meat inside should have a natural reddish-yellow color, feel firm and elastic when pressed.
- Do not buy pieces of meat that look dull, soft and mushy, slimy, or have an unpleasant odor.

Prepare the ingredients
Wash the chicken thoroughly with salt for about 3 – 4 minutes, then rinse well and let it drain.

Pick the fresh leaves of rau răm, discarding the old stems and bad leaves, wash them clean, and chop them finely. Slice the chili.
Peel the onion, cut it into thin rings. Dissolve 1/2 teaspoon of salt and 1/2 teaspoon of sugar into a bowl of cold water, then soak the onion for about 5 minutes, remove and let it drain.

Boil and shred the chicken
Put a pot of water on the stove, add 1/2 teaspoon of salt, 1/2 teaspoon of MSG, stir well and then add the chicken to boil. Turn the heat to high until the water boils, then lower the heat, boil for about 30 minutes, and when the chicken is cooked, take it out and let it cool.
When the chicken has cooled a bit, shred it into thin pieces and place it in a bowl.
Tip:- You can put the chicken in a pressure cooker and set the cooking temperature for about 15 – 20 minutes, after cooking, release the steam and let it rest for another 5 minutes before taking it out.

Mix the salad
Add into a bowl and stir the mixture of ingredients including the juice of 1 lemon and 3 calamondins, 5 tablespoons of sugar, 1 tablespoon of seasoning powder, 1/2 tablespoon of salt, 1 tablespoon of pepper, and 1/2 tablespoon of monosodium glutamate.
Next, add the onion, mop vegetables, Vietnamese coriander, 1/2 of the fried onions, 1/2 of the roasted peanuts, 1/2 of the sliced chili, and the mixed dressing into the bowl of chicken, gently mix for about 5 minutes to let the ingredients absorb the seasoning.
Transfer the salad to a plate, sprinkle the remaining fried onions, peanuts, and sliced chili on top of the salad to complete.
