How to make Spicy Stick Cake (spicy strands)

  • Mix the flour and season the mixture

    Put 190g of cold rice, 1 tablespoon of chili powder, 1 tablespoon of soy sauce, 2 tablespoons of sugar, 10g of cornstarch, 10g of tapioca flour, and 60g of wheat flour into a bowl, and mix the ingredients together with your hands.

    Add 20ml of water to the mixture and knead the dough with your hands until it forms a homogeneous dough that does not stick to your hands.

  • Roll and shape the dough

    Sprinkle a little flour on the cutting board and knead the dough until it no longer sticks to your hands.

    Use a rolling pin to flatten the dough, then shape it into long sticks by lightly pressing two lines on the dough with the edge of a knife and then cut deeply to separate it or directly cut the dough into long strips.

  • Steam the bread

    Place the cut bread sticks into the steamer and steam for 15 minutes.

  • Coat with spicy sauce

    To make the spicy sauce, mix 1 tablespoon of chili powder, 1 tablespoon of sugar, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of garlic powder, 1/2 tablespoon of cinnamon powder, 1 tablespoon of soy sauce, and 1 tablespoon of roasted sesame in a bowl.

    Next, pour 115 ml of cooking oil into a pan, wait for the oil to heat up, then add the mixture and stir well.

    When the sauce in the pan boils, add the steamed bread sticks and mix well. Remember to stir continuously so that all the bread sticks are coated with spices. After about 2 – 3 minutes, remove them.

    Put the prepared leftover rice into the blender, blend on high speed for about 15 – 20 seconds or you can place the rice in a mortar and pound it until smooth.

    Add to a bowl the mixture of prepared ingredients including: 6 tablespoons of flour, the blended leftover rice, 1 tablespoon of cornstarch, 1 tablespoon of chili powder, 1/2 tablespoon of salt, 1 tablespoon of cooking oil.

    Then use a spoon to mix well, add a little flour to your hands and knead the dough until it forms a cohesive mass.

  • Shape the sticks

    Let the dough rest for about 15 minutes, then divide it into small balls.

    Place 1 ball on the cutting board, to prevent the dough from sticking to the board, sprinkle some flour on top and underneath the surface of the board, use a rolling pin or a specialized tool to flatten the dough.

    Then use a knife to cut into bite-sized strands, and continue doing so until the mixture is finished.

    Prepare a steaming pot, arrange each cut strand of dough into the steamer and steam for 10 minutes over high heat.
