How to make Chinese cinnamon flower cake with chestnut filling

Filter the cinnamon flower tea
Remove impurities from the cinnamon flower, take 1.5 tablespoons and put it in a filter bag, soak in 1 liter of boiling water for 10 – 15 minutes.
Tip: If you don’t have a filter bag, you can directly put the cinnamon flower into the water for soaking and then use a sieve to remove it. -
Cooked Flower Cinnamon Syrup
After soaking the tea for 15 minutes, remove the tea bag, add all the rock sugar and the sugar for making jam into the pot of tea water.
Then bring it to the stove over high heat, stirring well until the sugar dissolves. When the water boils, reduce the heat to medium, skim off the foam to prevent the water from overflowing, and continue cooking for about 30 – 40 minutes.
Next, add 2 grams of dried flower cinnamon, stir well and cook for an additional 20 minutes until the syrup thickens, then turn off the heat, let it cool, and transfer it to a glass jar for storage.

Peel and Steam the Chestnuts
Frozen chestnuts are placed in a basin with a little boiling water, soaked for 1 – 2 minutes, then peeled.
Next, place the chestnuts in a steamer lined with parchment paper and steam for 15 – 20 minutes, then take them out and place them in a mortar to pound until crushed.
Add 2.5 tablespoons of honey, 1/3 teaspoon of vanilla extract, and mix well.
Tip: You can use fresh chestnuts instead of frozen ones for making the cake. When you buy fresh chestnuts, peel them to get the inner meat for processing. -
Cook the chestnut filling
Add the mixed chestnuts into a pan, add 50ml of water, and stir over low heat for 5 – 7 minutes until the filling thickens and sticks together.
Divide the chestnuts into 2 equal parts, then roll them into thin square shapes, and then wrap the chestnut filling tightly with plastic wrap.

Mix the dough
Add 100gr of rice flour, 25gr of glutinous rice flour, 15gr of granulated sugar, 15gr of lard, and mix well.
Add in 5 tablespoons of the prepared floral cinnamon syrup and mix until the dough can be kneaded and held without breaking, then sift the dough through a sieve for a smooth texture.

Pour into molds and steam the cake
Place the cake molds into a steamer lined with parchment paper, gently spread a layer of dough into the molds.
Next, add a layer of chestnut filling and then gently sprinkle another layer of dough on top and add a little dried cinnamon flower, cover the lid, and steam for 15 minutes.

When the cake is cooked, take it out and cut it into small square pieces, then spread a layer of cinnamon flower honey on top and it can be enjoyed.
