Ingredients for Vegetarian Coconut Milk Bánh Tằm For 2 people
Bánh tằm 500 gr Coconut milk 400 ml Vegetarian sausage 200 gr Roasted peanuts 50 gr
Fresh herbs to serve with: aromatic herbs, cucumber, onion, garlic, chili, lime,… (optional)
Seasoning: sugar, vegetarian seasoning, cooking oil, vegetarian fish sauce, marinade for grilled meat
Utensils: bowls, spoon and chopsticks, pan
Tips for choosing ingredients:
- You can easily buy bánh tằm at noodle shops, pho shops,…
- If you don’t like bánh tằm, you can substitute it with fresh noodles.
- You can buy vegetarian sausage or make it yourself.

How to Make Vegan Coconut Milk Tằm Cake

Prepare the Ingredients
Clean the cucumber, using the white skin (discard the seeds), shred or cut into thin strips as shown.
Cut the vegan sausage into short, bite-sized pieces.
Clean and rinse the herbs, then let them drain.
Tip:
Remove the seeds from the cucumber, only using the white flesh for a crispy and delicious dish.

Sauté Vegan Sausage
Heat a pan on the stove, add 2 – 3 tablespoons of cooking oil, turn on medium heat, when the oil is lightly bubbling, add the scallions and stir-fry until fragrant (do not let them turn golden), quickly remove the scallions to use as a topping for the tằm cake when serving.
Leave some oil and scallions in the pan, add the chopped vegan sausage.
Season with 1 teaspoon of vegan seasoning, 1 teaspoon of sugar, 1 teaspoon of vegan fish sauce, and 1 teaspoon of grilled meat marinade, stir gently to allow the sausage to absorb the flavors evenly. Sauté until the sausage firms up and turns golden on all sides.

Making vegetarian dipping sauce for steamed rice cakes
Put about 2 tablespoons of vegetarian fish sauce into a bowl. Add 1/2 teaspoon of garlic, depending on your preference for spiciness, you can add chopped chili, 1 tablespoon of lime juice, and 1 tablespoon of sugar.
Stir well until the sugar dissolves.
Tip:
- Season to taste according to your family’s preference.
- If you are strictly vegetarian and do not eat garlic, you can omit this ingredient.

Making coconut milk
Put 400ml of coconut milk into a pan, cook on low heat until the coconut milk thickens.
When the coconut milk is ready, add chopped green onions, season with about 2 tablespoons of cooking oil, 1/3 teaspoon of salt, and 1 teaspoon of sugar, then stir well for about 1 – 2 minutes and turn off the heat.
Tip:
- Cook the coconut milk on low heat to prevent it from overflowing; the fatty layer of coconut on the surface will spill out, losing the original richness of the coconut milk.
- If you do not eat onions, you can omit this ingredient.
- If you want the coconut milk to be thicker, you can mix a little cornstarch or tapioca flour with water and add it in.
