How to make Coconut Ice Cream

Whisk the egg and sugar mixture
Put 3 egg yolks and 100g of sugar into a large bowl, then use a whisk to beat for about 5 minutes until the sugar dissolves and mixes with the egg yolks, forming a light yellow, fluffy, and evenly colored mixture.

Mixing and cooking the egg and coconut milk mixture
Place a pot on the stove, then add 400ml of coconut milk, cooking over low heat while continuously stirring with a flat whisk for about 3 minutes until the coconut milk starts to simmer and steam rises, then turn off the heat.
Next, gradually add each spoonful of the simmered coconut milk into the bowl containing the whipped egg and sugar mixture.
As you add, stir continuously for about 3 minutes until all the coconut milk is used, then strain the egg and coconut milk mixture back into the pot used for cooking the coconut milk earlier.
Then, place the pot back on the heat, stirring continuously while bringing the egg and coconut milk mixture to a simmer for about 4 minutes until it starts to bubble and steam lightly, then turn off the heat.
Add another 1/2 teaspoon of vanilla powder and stir until the vanilla dissolves, then remove the pot and let the egg and coconut milk mixture cool completely for about 10 minutes.

Whipping the cream
Pour 200ml of whipping cream into a large bowl, then use a hand mixer to beat it for about 5 minutes until the whipped cream mixture thickens and small peaks form, then stop.

Mixing the coconut cream mixture
After whipping the cream, add the cooled mixture of eggs and coconut milk, then use a whisk to mix until the coconut cream mixture is smooth and thick.
Next, pour this coconut cream mixture into a plastic container or mold of your choice, then cover it tightly and place it in the freezer overnight for about 8 – 10 hours until the ice cream is completely frozen.

Completion
Fresh coconut, you cut off the top, drain all the coconut water, then use a coconut grater to shred the coconut flesh inside.
Next, use a specialized ice cream scoop to scoop the ice cream into the coconut, sprinkle some roasted peanuts, dried coconut, and drizzle a little chocolate sauce to finish.
