How to choose cucumbers that are not bitter:
- Choose cucumbers that have a bright green color, fairly even in color, with no dark spots or yellowing, as this is a sign that the cucumber has been stored too long and is starting to spoil.
- Cucumbers should be straight, not or slightly curved. Cucumbers that are long and uniformly sized are the type with dense flesh, which will taste crisper and better than the short and round cucumbers.
- It is advisable to choose heavier, softer cucumbers with a smooth skin, without bumps, and smaller cucumbers tend to be sweeter than larger ones.
- Avoid purchasing cucumbers that bulge out, are large in the middle, or have a large top and a small bottom (and vice versa) as these are overripe cucumbers, with many seeds, hard, and not tasty.
- If you accidentally buy a bitter cucumber, you can peel it to remove the bitterness.
How to choose sweet pineapples:
- You should choose those with a bright yellow color from the crown to the tip for natural sweetness. The more uniformly yellow the pineapple, the sweeter it will be.
- Avoid choosing those that are unevenly colored, have dark brown spots or yellow turning red as they are overripe.
- Pineapples that are round and short will have more flesh compared to those that are long and tubular.
- If a pineapple is overripe, it will be soft, and the skin will be wrinkled. Fresh, good pineapples should not be too hard or too soft; pressing your finger into it should not leave an indentation.
- The larger and sparser the eyes of the pineapple, the better it is. Because after peeling away the eyes, you will have thick pineapple flesh, and large, sparse eyes indicate that it is mature and naturally ripened, not chemically treated.
- If you smell a fragrant pineapple, you should select it; avoid those with little or no scent as they are not ripe. Also, do not choose ones that smell a bit sour as they are overripe.
- The crown of the pineapple: the greener the color, the fresher the pineapple. If the pineapples are overripe, the crown will be dry or turn brown.

- Step 1: Cut off both ends of the fruit, the pineapple will take on a standing cylindrical shape.
- Step 2: Use a double-edged knife to peel from top to bottom or place the fruit on a cutting board and use a knife to cut off the outer skin.

- Use a knife to cut diagonal grooves along the body to remove the eyes. You can also use a specialized tool to remove these eyes.
- Note that you should cut shallowly; cutting too deep will waste a lot of the fruit’s flesh.
Clean the pineapple and cut it into bite-sized pieces as shown.
Clean the cucumber, cut it in half, and use a small spoon to scoop out all the seeds; this will make the salad crunchier and less sour. Then cut it into bite-sized pieces. You can soak the cucumber in ice water for about 5 – 10 minutes for extra crunchiness.
