    After buying the eel, put it in a basin, mix a little vinegar with salt, then rub the mixture all over the eel to remove the slime. Next, use a knife to remove the backbone and cut it into bite-sized pieces.

    Place the eel in a bowl, marinate the eel with 1/2 teaspoon of galangal powder, 1/2 teaspoon of garlic powder, 1/3 teaspoon of vegetable seasoning, and 1/2 teaspoon of fish sauce. Let it sit for 15 – 20 minutes for the eel to absorb the seasoning.

  • Marinate the meat

    Next, add the minced meat to the bowl, marinate with 1/3 teaspoon of onion powder, 1/2 teaspoon of fish sauce, a little ground pepper, and mix well to ensure the meat absorbs the seasoning.

    Next, you wash the green onions. Place a pot of water on the stove, wait for the water to boil, then add the green onions to blanch briefly and then remove to drain.

  • Stew the eel

    You place the pot on the stove, add 2 tablespoons of cooking oil to the pot, set the heat to low, wait for the oil to heat up, then add 1 clove of garlic and 1 shallot minced to sauté until fragrant.

    When the shallots and garlic turn golden, add 320ml of fresh coconut water, bring to a boil over low heat. Once the water in the pot boils, drop the rolled eel into stew with medium heat for about 20 – 25 minutes until cooked, then turn off the heat.

    So the dish of eel cooked in coconut water is complete, ready for the baby to enjoy. The eel meat is tender, fragrant, not mushy, and the minced meat is seasoned just right, irresistibly delicious.
