  • Soak Coconut Jelly and Chia Seeds

    Pour the coconut jelly into a bowl, add enough water to cover the jelly and soak for 1 – 2 hours to let the jelly expand. After that, put the jelly back into the cloth bag and soak it in water for another 1 – 2 hours, repeating this process about 2 – 3 times to ensure the jelly expands evenly.

    Add about 20g of chia seeds to a bowl with about 50ml of warm water and soak for about 7 – 10 minutes until the seeds fully expand, stirring well to prevent clumping.

    Tip: Since raw coconut jelly has water-absorbing properties and can be used immediately after soaking, during the soaking process, you should use cool or warm water.

  • Cook coconut jelly with chia seeds

    Place a pot on the stove, add about 1 liter of water to the pot, and bring to a boil over medium heat. Then, add the coconut jelly and blanch for about 2 – 3 minutes, then set aside in a basket to drain.

    Using the same pot, add about 3 liters of water along with 1kg of rock sugar to the pot. Heat and stir over low heat until the sugar dissolves completely.

    Next, you can add an additional 200 – 300g of granulated sugar to enhance the sweetness of the broth. Then add all the coconut jelly, stir well, and cook for about 10 – 15 minutes, adding the pandan leaves tied together to cook along.

    Finally, add the chia seeds to the pot and cook for another 5 – 10 minutes before turning off the heat. Wait for it to cool down, and then you can scoop it into bowls to enjoy.
