Cobia 1 fish (about 400g) Garlic 2 cloves Chili 2 pieces Shallot 1 bulb Fish sauce 2 tablespoons Sugar a little Salt a little Cooking oil 2 tablespoons

How to choose fresh and delicious cobia

  • Choose live, healthy fish with bright, clear eyes that are not cloudy and slightly bulging.
  • Choose cobia with firm flesh that sticks tightly together, not loose, has high elasticity, and smells like the sea when sniffed.
  • To buy fresh fish, you should go to the market early in the morning when the fish has just been caught and has the characteristic sea smell.

How to Cook Fried Giant Fish with Fish Sauce

  • Prepare Ingredients

    Buy the fish, clean the fins, gills, and tail, then wash thoroughly, dilute about 1/2 spoon of coarse salt in water, and soak the fish for about 3 – 5 minutes.

    Remove and drain, then use a knife to make a few cuts on the fish’s back.

    Tip: To help the fish cook evenly and absorb the seasoning faster, make 2 – 3 cuts on the fish’s back.

    Marinate the giant fish with 1/2 teaspoon of coarse salt.

    Chili, onion, and garlic should be crushed and mixed into 2 tablespoons of fish sauce with 1 tablespoon of sugar, stirring until dissolved.

    Put a pan on the stove, add 2 tablespoons of oil, and heat the oil. Add the fish and fry until golden brown on both sides over high heat.
