Make caramel
Prepare a pot, add 55gr of sugar and 3 tablespoons of water, and cook over medium heat for 5 minutes. When the sugar boils, reduce to low heat and continue cooking for another 5 – 7 minutes until it turns a chestnut color, then turn off the heat and pour the caramel into a mold to cool.
Tip:
- To easily observe the color of the caramel, use a light-colored pot, avoiding dark colors.
- Avoid not stirring the caramel while cooking; just hold the pot handle and stir evenly.
- To achieve a beautiful golden-brown caramel, add 1/4 teaspoon of lemon juice when the sugar has melted.

Warm the milk
Take a cup to soak 60gr of gelatin powder in 150ml of cold water for 10 – 15 minutes.
Then prepare another pot on the stove with 500ml of unsweetened fresh milk and 70gr of sugar, cooking over medium heat for 7 – 10 minutes.
When the milk starts to bubble, reduce the heat and add the softened gelatin, stirring for 5 – 7 minutes before turning off the heat and transferring to a bowl.
Tip: If you are using sweetened milk, you can reduce the amount of sugar.

After pouring the milk and gelatin into a bowl, take another cup to dissolve 2 tablespoons of coffee powder, 140ml of hot water, and 55g of sugar, then add this mixture to the milk along with 400ml of fresh cream (whipping cream) and stir well together.

After dissolving all the ingredients together, pour it into a mold and let it cool for 30 – 60 minutes, then place it in the refrigerator for 4 – 6 hours to finish.
