First, put 15g of coffee powder into the filter, press moderately, then add 70ml of hot water at about 90 degrees C and cover the filter. Wait for the coffee to extract 60ml of concentrated liquid.

Make the cake base
Separate the egg yolks and egg whites into 2 different bowls, use a whisk to beat the egg yolks, then add 60ml of sunflower oil, 60ml of coffee extract, and 1 tablespoon of vanilla extract, and mix well.
Finally, sift 60gr of all-purpose flour, 60gr of cornstarch, and 5gr of baking powder into the mixture and stir until the batter thickens. -
Whip the egg whites
Use an electric mixer to whip the egg whites for about 5 seconds until large bubbles form. Next, add 120g of granulated sugar, start the mixer at a low speed for about 2 minutes, then increase the speed to high, and whip until the egg whites form stiff peaks when the whisk is lifted, then stop.
