How to prepare Couscous salad with tomatoes and cucumbers
-
Prepare the ingredients
To clean dirt, soak the cucumber in salt water for 10 minutes after purchasing, then cut it in half and slice into small pieces about the thickness of a small finger. Rinse cherry tomatoes with water and cut them in half.
Wash cilantro and green onions, then chop them finely.
Peel the garlic and mince it. Peel the onion and shallot, then dice them.
Tip:
- If you’re afraid of getting teary-eyed from cutting onions, you can chew on something while cutting. The mouth movement helps to minimize the amount of onion juice that reaches your eyes effectively.
- Soaking in salt water will help keep the onion white while reducing its pungent smell.
- After cutting the onion, you can place it in ice water to reduce the sharpness.

Cooking couscous
Place a pan on the stove, add 1 tablespoon of olive oil and heat it, then add all the diced onion and minced garlic to sauté until fragrant.
When the onion and garlic are aromatic, add 300g of couscous to the pan and stir well over low heat for about 2 minutes.
Tip: It is advisable to sauté the couscous with onion, garlic, and olive oil or cooking oil before cooking, which helps the couscous to fluff evenly and taste better when cooked.
Next, pour 350ml of chicken broth into the pot. Cover the lid, reduce the heat, and cook the couscous for about 10 minutes until it is tender, then turn off the heat.
-
Mixing rice with butter
Next, add 1 tablespoon of unsalted butter and 1/2 teaspoon of salt to the pot and mix well to combine the ingredients.
Tip: It is best to mix the couscous with butter while it is still hot, so the butter can melt and absorb evenly into the couscous easily.
