How to choose fresh crispy carp
- For live fish, observe the shape of the fish. Choose those that are long and have a uniform appearance from head to tail.
- Additionally, don’t forget to check the fish scales. A good fish will have even, bright scales and no bruises.
- River carp will have a longer body and look slimmer compared to pond-raised carp. It’s better to choose river carp as they are firmer and sweeter than pond carp.
- Avoid choosing fish with bruises, dull scales, or a swollen belly as they may contain a lot of fat or fish eggs.
How to properly choose pineapple
- Choose pineapples that are brightly colored yellow, sometimes mixed with green, with evenly sized eyes, and a characteristic aroma that is not too strong.
- Fruits that are just ripe and fresh will feel moderately soft to the touch, with slightly wrinkled skin.
- Avoid buying pineapples that are unevenly colored, have a strong smell, or are too green, as they will not taste good.
How to choose fresh and delicious tomatoes
- Naturally ripe tomatoes have a smooth, plump skin and bright red color. If you look closely, you will see small specks in the flesh of the fruit through the skin. When cut open, the flesh will be bright red and have yellow seeds.
- You should choose tomatoes that feel firm in your hand; avoid soft tomatoes as they spoil quickly.
- If the stem of the tomato is green and tightly attached to the body, it means the fruit is naturally ripe.

Prepare the ingredients
Ask the seller to clean the fish; when you buy it home, add some salt and 1 halved lemon, then rub the fish clean, and rinse it 2-3 times with clean water.
Next, fillet the fish and cut it into bite-sized pieces about 1/2 knuckle thick.
Peel the shallots and chop them finely. Fresh turmeric should be peeled and chopped small.
Wash the tomatoes and cut them into wedges. Clean the pineapple and remove the eyes, then cut it into bite-sized pieces.
Peel the onion and cut it into wedges. Wash the accompanying vegetables and cut them into pieces about 2 knuckles long.

Cook the hot pot broth
Place a pot on the stove over medium heat, add 1 tablespoon of cooking oil to the pot, and wait for the oil to heat up before adding minced shallots and fresh turmeric to sauté until fragrant.
When the shallots are golden and fragrant, add tomatoes and pineapple, stir-frying for about 2 minutes until the tomatoes soften, then add onions, 2 sprigs of Vietnamese balm, and 2 liters of water and bring to a boil.
Next, add 1/2 cup of fermented rice, 1 tablespoon of seasoning, 1/2 tablespoon of salt, 1 tablespoon of fish sauce, and 2 tablespoons of sugar, stir well, and then add the fish bones to cook for 15 minutes.
Finally, taste and adjust the seasoning, then strain to obtain the hot pot broth.
