How to Choose Fresh Oranges

  • To buy fresh oranges, you should choose those with bright, shiny skin and a slightly yellowish bottom.
  • Select oranges that are round, even in shape, and not deformed. The skin should be smooth and fresh, with the stem still firmly attached.
  • Choose oranges that are medium-sized, feel firm in hand, and have a characteristic orange scent when brought to the nose.
  • You should avoid buying oranges that are unevenly colored with a pale yellow side, those with thick skin, as these are usually tough and have less juice.

How to make fresh orange Panna cotta

  • Make the milk pudding

    First, soak 5g of gelatin in 10g of water for about 10 minutes to let the gelatin bloom.

    In a bowl, add 210ml of unsweetened fresh milk, 100ml of whipping cream, and 30g of honey, and stir well to combine the ingredients.

    Next, place a pot on the stove, pour all the milk mixture into the pot and heat over low heat. Once the mixture starts to boil, add the bloomed gelatin and cook while stirring until completely dissolved, then turn off the stove.

    Hold the cup at a 90-degree angle, divide the milk mixture into 2 parts, pour half of the heated milk into the cup, cover it, and place it in the refrigerator for at least 2 hours.

  • Making the orange pudding layer

    Next, soak 2g of gelatin in 8g of water until the gelatin swells.

    Squeeze the juice from 1 yellow orange to obtain 100ml of orange juice. Add 30g of honey and stir until dissolved with the orange juice.

    Pour the entire mixture of orange juice and soaked gelatin into a pot, heat on low, stirring continuously. After about 5 minutes, turn off the heat and let it cool completely.

    Then, take the set milk pudding cup out, pour the cooled orange juice at an angle into the cup, seal tightly, and refrigerate for at least another hour.

  • Making the final pudding layer

    After the first two pudding layers have set, heat the remaining milk on the stove over low heat, stirring well to dissolve the gelatin, then turn off the heat and let it cool.

    Next, take the set pudding cup, pour the remaining milk into the cup vertically, and refrigerate the pudding cup for the third time for at least 1 hour.

    How to remove pudding from the cup:
    • Prepare a bowl of warm water at about 80 degrees Celsius, place the pudding cup in the warm water and leave it for 5 – 7 seconds before taking it out.
    • Then, turn the cup upside down onto a plate and give it a shake for the pudding to fall out.

How to make Orange Syrup Panna Cotta

  • Soak Gelatin

    Soak 5 sheets of gelatin in cold water for 15 minutes.

  • Boil the milk mixture

    Place a pot on the stove, add 300ml of fresh milk, 200ml of whipping cream, 100ml of orange syrup, and 60g of sugar, then stir well.

    Next, add the soaked gelatin and continue stirring until the gelatin dissolves; turn off the heat when the mixture reaches 80 degrees Celsius.

  • Pour into molds

    Pour the milk mixture into molds and refrigerate for 2 hours.

    After 2 hours, pour a little orange syrup over the cake to finish.
