How to choose fresh and delicious chicken eggs
- Choose eggs with a dark brown shell, evenly colored, without cracks or black spots.
- When touching the eggshell, if the surface feels slightly rough, it indicates fresh eggs, while a smooth surface indicates the eggs have been stored for a while.
- Fresh eggs will show a small air chamber when held under a light, with a round yolk that is balanced and does not move, having a light orange or pink color.
- Bring the egg close to your ear and shake gently; if you don’t hear any noise, it is fresh, while a sound indicates the egg has been stored for a long time.

How to make Cream brulee

Whisk the eggs
Separate 6 egg yolks into a bowl with 40g of sugar and 1 teaspoon of salt, use a whisk to beat evenly in one direction until the sugar and salt dissolve completely and the eggs turn light yellow.

Cook the egg and whipping cream mixture
Pour 400ml of whipping cream into a pot and place it on the induction stove to heat on low until the cream is warm and steam rises.
Next, add the whipped egg mixture and 1/2 teaspoon of vanilla, stir continuously until the mixture is well combined, then turn off the heat and strain through a sieve into a measuring cup.

Pour into molds
Place the cake molds into the tray, then position a measuring cup near the edge of the mold and slowly pour the heated mixture in to avoid creating air bubbles in the cake.
Next, add water to the tray, filling it to about 2/3 the height of the cake molds.

Bake the cake
Place the tray of cakes in the oven and bake at a temperature of 150 degrees Celsius for about 30 – 45 minutes.
Then take the cakes out of the oven, wait a moment for them to cool, and put them in the refrigerator for about 30 minutes to 1 hour to set.

Caramelizing Sugar
When you see the cake has set, sprinkle a little thin layer of sugar on each mold, then use a torch to caramelize until the sugar melts and turns a dark brown color, then wait a moment for the sugar to harden.

Completion
Prepare parchment paper and a little caramel sugar, then use a spoon to scoop out the sugar to shape it as you like to decorate the cake more beautifully!
When eating, you can add a few strawberries on top of the cake along with the shaped caramel sugar, and it’s ready to enjoy.
