Ingredients for Crispy Sweet Fried Corn Cake For 2 people

Rice flour 120 gr Wheat flour 65 gr Glutinous rice flour 15 gr Sugar 40 gr Eggs 1 piece Turmeric powder 1 teaspoon Water 140 ml Large corn 1 piece Salt 1/2 teaspoon Ginger 1 small piece

How to Make Crispy Sweet Fried Corn Cake

  • Mix the batter

    Add the rice flour, wheat flour, glutinous rice flour, sugar, turmeric powder, and egg into a bowl. Add water and mix well until the mixture is smooth, with a consistency like the picture.

    Let the batter rest for 1 hour.

    After letting the batter rest for 1 hour, add 1/2 teaspoon of lemon juice to the batter to create a sour taste so that the fried cake will be crispy.

    Note: If you have more time, you should let the batter rest for 6 – 8 hours; it will have a natural sourness, and you won’t need to add lemon juice anymore. When frying, the cake will also be crispy and delicious.

  • Prepare ginger and corn

    Peel the ginger, wash it clean, and drain it, then slice it into thin strips. Remove the husk from the corn and clean off all the silk. Use a grater to finely grate the corn.

    Note: You should grate the corn to keep it sweet and fragrant. Do not separate the kernels, as that will leave the husk and the tough core, making it dry and not tasty.

  • Mix corn and ginger into the batter

    Add half of the corn and half of the prepared ginger into the bowl of batter. The remaining corn and ginger will be used to place on top of the cakes while frying.

    Mix the batter thoroughly to combine everything well.

  • Fry the cakes

    Add oil to the frying pan, enough to submerge the cakes, and heat the oil.

    Use a large spoon to scoop the batter, adding a little grated corn and a few strips of ginger on top. Slowly drop the batter into the hot oil.

    Wait until the edges of the cake turn golden, then flip the cake to cook both sides evenly. Remove the cake and let it drain the oil.

How to make Spicy Corn Cakes

  • Prepare the corn, shallots, and chili

    Peel the corn, removing all the silk. Use a grater to grate it finely. If you don’t have a grater, you can chop the corn finely as shown in the picture.

    Wash the shallots, peel them, and chop them finely. Cut the chili in half, remove all the seeds, and chop finely.

  • Mix the batter

    Add rice flour, corn flour, wheat flour, chili powder, sugar, turmeric powder, fresh chili, and chopped shallots, 1 tablespoon of seasoning, and 1 tablespoon of pepper, and mix well.

    Then add 3 eggs, using a whisk to mix well with 30 ml of water to thicken it up.

    Let the batter rest for about 2 hours.

    After the batter has rested, add the grated corn. Mix the mixture well.

    Add enough oil to cover the frying pan, enough to submerge the cakes, and heat the oil.

    Use a large spoon to scoop the batter and slowly drop it into the heated oil.

    Wait until the edges of the cakes turn golden, then flip the cakes to cook both sides evenly. Remove the cakes and let them drain the oil.
