Mix the batter
Add the rice flour, wheat flour, glutinous rice flour, sugar, turmeric powder, and egg into a bowl. Add water and mix well until the mixture is smooth, with a consistency like the picture.
Let the batter rest for 1 hour.
After letting the batter rest for 1 hour, add 1/2 teaspoon of lemon juice to the batter to create a sour taste so that the fried cake will be crispy.
Note: If you have more time, you should let the batter rest for 6 – 8 hours; it will have a natural sourness, and you won’t need to add lemon juice anymore. When frying, the cake will also be crispy and delicious.

Prepare ginger and corn
Peel the ginger, wash it clean, and drain it, then slice it into thin strips. Remove the husk from the corn and clean off all the silk. Use a grater to finely grate the corn.
Note: You should grate the corn to keep it sweet and fragrant. Do not separate the kernels, as that will leave the husk and the tough core, making it dry and not tasty.

Mix corn and ginger into the batter
Add half of the corn and half of the prepared ginger into the bowl of batter. The remaining corn and ginger will be used to place on top of the cakes while frying.
Mix the batter thoroughly to combine everything well.

Add oil to the frying pan, enough to submerge the cakes, and heat the oil.
