How to Make Fried Crickets with Fish Sauce

Prepare the crickets
Soak the crickets in diluted saltwater for about 2 minutes.
Roast the crickets in a hot pan for about 2 minutes.
Let the crickets cool, then start to remove the innards and cut off the wings if any.
Rinse several times with clean water and let drain.

Stuff peanuts into the cricket’s abdomen
Roast the peanuts without removing the skin.
Stuff 1 – 2 peanuts into the cricket’s abdomen.

Fry the crickets
Heat a large pan with oil, wait for the oil to get hot, then add the crickets to fry until puffed and immediately remove them.

Fry the crickets with fish sauce
Marinate the crickets with minced garlic and chili, add a little fish sauce and monosodium glutamate.
Add a bit of oil to a non-stick pan, then stir-fry the crickets for about 3 – 5 minutes.
Presenting the dish
Present the crickets on a plate that has been decorated with cucumber, tomato, and young starfruit leaves.
Add a little roasted peanuts and shredded mango in the center to accompany.
