  • Prepare the mushrooms

    Put 100g of crispy frying flour into a bowl. While pouring in water, use a chopsticks to gently stir the flour until it dissolves completely in the water and thickens, then stop pouring.

  • Making Tamarind Dipping Sauce

How to preserve oyster mushrooms

  • You should remove all the stems and any spoiled parts, as they can quickly spread to the intact parts. You can place them in a styrofoam box with ice at the bottom and then put the mushrooms on top, placing the styrofoam box in a cool area.
  • You can wait for the mushrooms to dry, wrap them tightly in newspaper, and put them in the refrigerator’s cool compartment for use within 1 – 2 days. Alternatively, after cleaning, you can package or can them and put them in the refrigerator at a temperature of 10 – 12 degrees Celsius to avoid reverse moisture absorption.
  • Another method to preserve oyster mushrooms is to first remove the mushroom stems and separate them into individual pieces. Then, boil the mushrooms in diluted salt water for about 15 minutes, then drain. Finally, just place the mushrooms in a container and store them in the freezer.
  • With this method, you can preserve the mushrooms for up to 30 days from the day you put them in the freezer.
