How to choose fresh fish
- Choose fish that swim in water and breathe regularly.
- If the fish swims in water but is sluggish, and the skin under the belly is not smooth, then it should not be bought as the fish is no longer fresh and healthy; it may be sick or injured.
- Choose fish with large, clear eyes, and slightly protruding pupils.
- The scales of the fish should be shiny, clean, and evenly arranged on the body. The gills should be tightly closed, with a bright pink color, and should not have an unusual smell.
- If the fish is no longer fresh, its eyes will be cloudy, the pupils will be sunken, the scales will be peeling, the gills will be wide open with a black color, the flesh will be soft, and the bones will separate, do not buy this type of fish as they are not fresh, the flesh is mushy and fishy.
How to choose fresh bell peppers
- When choosing bell peppers, you should select those with a shiny, thick, smooth skin and that still have their stems.
- You should choose the ones that feel heavy in hand and have a bright color as these are fresh, delicious, and nutrient-rich bell peppers.
- Do not choose bell peppers that are soft, feel flimsy, and have blemishes or cracks on the skin… as these are spoiled, damaged, and lose nutrients.
How to make Sweet and Sour Grilled Fish

Prepare the ingredients
For red, yellow, and green bell peppers, wash them thoroughly and dice them.
Peel and finely chop ginger, garlic, and shallots. Wash the green onions and coriander, then cut them into pieces about 2cm long.
Clean the fish by removing the fins, scales, and gills, then wash it again.
Next, use a knife to cut the head and tail of the fish separately. For the middle part, especially the belly of the fish, cut gently and slowly to avoid breaking the gallbladder.
Once the fish is cut into pieces, remove the internal organs, wash the fish clean, and let it drain.
How to clean fish without a fishy smell
- After cleaning, you can soak the fish in diluted salt water or rice water for about 15 minutes, then rinse with clean water to reduce the fishy smell.
- Alternatively, you can dilute lemon juice, soak the fish in it for a few minutes, and then clean the fish as usual.
Note:
For the crispy fried fish with sweet and sour sauce, only use the middle part; the head and tail can be used to make sour soup.

Fry the carp
Add 100ml of cooking oil to a heated pan, then add the carp and fry until golden brown on both sides before removing it.
Tips for frying crispy fish without oil splatter
Make sure the pan is really hot before adding oil to fry to prevent the fish from sticking to the pan.
Add oil to the pan, wait until the oil is really hot, then sprinkle a little salt evenly, and then add the fish to fry. Alternatively, you can rub a slice of lemon on the bottom of the pan before adding oil to reduce oil splatter.

Make sweet and sour sauce for the fish
Heat 30ml of cooking oil, then add 10g of minced garlic, 15g of minced onion, and 15g of minced ginger to sauté until fragrant.
Next, add 2 packets of sweet and sour rib sauce and 250ml of water, stir well, and continue to cook until the mixture simmers.
Then, add the crispy fried fish to the pan and cook for about 1 – 2 minutes. Add bell peppers and cook for another 2 minutes, then add green onions and dill, and then turn off the heat.
Now you have completed the delicious and attractive crispy fried carp with sweet and sour sauce.
Note: You can replace the sweet and sour rib sauce with tomato sauce if you want.
