  • Good duck eggs are easy to recognize. First, when held up to the light, the inside of the egg should be full at the top without too much empty space.
  • When holding the egg, it should feel firm, not too light, with tiny speckles or black mold on the shell. Moreover, if shaken, a sound indicates that the egg is hollow because it has spoiled from being kept for too long.
  • Another interesting way to choose is to soak the eggs in water. If the eggs are fresh, they will sink to the bottom; conversely, spoiled eggs will float and lie on their sides.

How to choose fresh and delicious chicken eggs

  • For industrial chicken eggs, fresh chicken eggs have dark brown shells, even in color, with no cracks or tiny black spots. In contrast, if you see a pale shell and quite a few black spots, it indicates that the chicken eggs have been stored for a long time.
  • On the other hand, the shells of free-range chicken eggs are usually pale, with some eggs being slightly white but still very tasty.
  • When you touch the surface of the eggshell and feel it is rough and slightly gritty, it indicates that the eggs are fresh. If the surface is too smooth, the egg has been stored for a long time.
  • Fresh chicken eggs, when held up to the light, show a clearly round yolk, which is especially balanced in the center of the egg, with transparent egg white. In contrast, if the yolk is red and has streaks, it means the eggs are old.
  • In addition to the above methods, you can also perceive freshness by gently shaking the egg to listen to the sound. If there is a loud noise, it means the egg is spoiled or the hen is still incubating. If you don’t hear any noise, then this is indeed a fresh and delicious chicken egg.

How to prepare crispy fried duck eggs

  • Boiling duck eggs

    First, when buying duck eggs, to avoid harming your health when cooking, you should wash away all the dirt stuck on the eggs and then remove them.

    Next, place the eggs in a pot and add enough water to cover the eggs.

    Then turn on high heat and start boiling for about 5 minutes. When you see the water boiling, reduce to medium heat and continue boiling for another 10 minutes, then take the eggs out to cool and peel.

    Tip:

    • When adding water to boil the eggs, be careful not to add too much or too little water to avoid losing all the nutrients if boiled too long or the eggs being undercooked if the water evaporates.
    • To prevent the duck eggs from cracking while boiling, you can add a little salt before the water boils.
    • Remember to reduce to medium heat after the water has boiled because too high heat will cause the eggs to bump into each other, making them easy to crack.

  • Mixing the batter

    You put the crispy flour and the breadcrumb flour into 2 separate bowls. For the crispy flour, add 1 teaspoon of salt, 1/2 teaspoon of ground pepper, and mix well.

    Crack the eggs into another bowl and beat them well.

    Once the preparation is done, you place a pot on the stove over high heat and add 300 ml of cooking oil.

    While waiting for the oil to heat up, take each egg out to start coating. First, coat with a layer of crispy flour, then dip in the beaten egg, and cover with a layer of breadcrumb flour.

    When you see the oil is hot, add the eggs to fry over high heat until they are evenly golden, then remove them to drain the oil.

    Tip:

    • To ensure the batter is evenly crispy and has a nice golden color, you should use plenty of oil for frying. It’s best if the oil covers the eggs completely.
    • If you prefer your final product to have a thin, soft shell, you can skip the breadcrumb layer and use an additional layer of crispy flour instead!
